Since these don’t have any oil, these cookies come out to just 75 calories per cookie, which is about 1/2 of a regular one. So we can just call them healthy right?? Only thing is I can eat like 10 of them…

Ty’s family showed me how to make these and they’re so good. If you need a last minute treat to make for yourself or bring to a gathering or holiday, these are perfect. Takes 5 minutes of prep and just a few more to bake. Here’s everything you’ll need and how to make them!

Equipment
Ingredients
  • Spice cake mix: I use the Betty Crocker super moist spice cake mix.
  • Canned pumpkin: Libby’s is my favorite.
  • Chocolate chips: You can use whatever chocolate chips you like, but mini semi sweet are incredible in these.

How To Make Them

  1. Preheat oven and prep pan: Preheat oven to 350 F and line baking sheets with parchment paper.
  2. Make the dough: Stir cake mix and canned pumpkin together in a mixing bowl until fully combined. Mix in the chocolate chips.
  3. Form the cookies: Use a cookie scoop or spoon to form into ~1.5 tbsp sized cookies. These don’t spread out while baking, so I fit 3×5 on each sheet pan. I also gently press each cookie down to flatten a bit (see video below).
  4. Bake: Bake each pan at 350 F for 12-14 minutes. Let cool for about 5 minutes before transferring to a cooling rack to let cool completely.

Tips

  • Chill: I think these cookies are even better cold so I always store them in the fridge.
  • Customize: Add nuts, different chocolate chips, whatever mix ins you love most.
  • Silicone baking mats: These also work great in place of parchment.

To Store

Store these cookies in an airtight container or ziploc on the counter up to 3 days, in the fridge up to 2 weeks or in the freezer up to 3 months.
