30 Minute Turkey Enchilada Skillet
If you’re looking for a new easy dinner idea, make this 30 minute turkey enchilada skillet! It’s packed with 40 grams of protein per serving, made all in the same pan, and so delicious!

I love one pan meals. They’re so convenient and cleanup is just that much faster. The only exception is if you wanna make the homemade enchilada sauce (which I definitely recommend) but it only takes 30 seconds to wash the extra saucepan, and SO worth it. Of course, canned enchilada sauce works just as well – I really like the Old El Paso brand.
But seriously, you guys are going to love this one. Here’s everything you need to know to make it!
What You’ll Need
- White onion
- Red bell pepper: Yellow or orange works too.
- Taco seasoning: I use my homemade taco seasoning. Can sub 1/2 taco seasoning packet.
- Ground turkey: I prefer 99% lean for the most protein.
- Black beans: 15 oz can.
- Rotel: I use mild – use original if you like a bit more spice.
- Diced green chiles: Love the La Victoria brand.
- Reduced fat cream cheese: The Philadelphia one has better texture than the value brand and will smooth out a lot easier.
- Non fat plain greek yogurt
- Enchilada sauce: Homemade or canned both work!
- Extra thin corn tortillas: I like these Mission ones.
- Cheese: Any cheese you love. I use Colby and Monterey Jack.

How To Make It
- Make the enchilada sauce (if applicable): If you are making homemade enchilada sauce, do this first so it can simmer while you make everything else. Click the link here to take you to the recipe. It only takes a few extra minutes and is so delicious. If you’re using canned sauce, skip this step.
- Cook the veggies: Set a large deep skillet on medium high heat, spray with cooking spray, and add the onion and pepper, along with a little taco seasoning. Cook until veggies have softened (about 5 minutes).
- Add the ground turkey: Add the ground turkey plus some more taco seasoning and pinch of salt. Cook, breaking apart into small pieces (I always use a meat chopper), until fully cooked (about another 5 minutes).
- Add canned things, dairy, and sauce: Drain and rinse the black beans, and drain the Rotel. Add the black beans, Rotel, green chiles, cream cheese, greek yogurt, and enchilada sauce to the turkey and veggies, stirring everything together until fully combined.
- Tortillas: Chop the corn tortillas into strips and stir them into the skillet. It doesn’t really matter what size, just cut them however you prefer. Sometimes I have to use my fingers to spread them apart if there are two or three stuck together so they all get coated in the sauce.
- Final touches: Lastly, add the shredded cheese and cover with a lid so everything gets nice and melty. Serve immediately with any other toppings you love!
Toppings I Like
- Cilantro
- Limes
- Avocado
- Sour cream
- Pickled onions
- Lettuce

To Store
Once cooled, transfer to an airtight container and store in the fridge up to 4 days. I just reheat in the microwave in 30 second increments till it’s as warm as I like.

I made this last week for dinner and it was a hit! My husband finished the left overs in two meals! Haha
We will definitely be making this again. Thanks 🙂
Hi Kaitlin,
My husband is the same way haha. Love that it turned out well!
How much is a serving for the macro content?
Hi Michelle,
One serving is 336 grams, or 1/5 of the whole recipe.
Mine was very watery… any advice?
After cooking the turkey and veggies, try scooting everything to one side of the pan and use a folded paper towel to absorb any excess liquid. Sometimes there can be a bit more, depending on your pan and fat % of ground turkey. Hope this helps!
I’m not sure why it came out very watery. But it tasted good
Hi Theresa,
Sometimes the ground turkey can have more liquid cook off depending on the brand and fat percentage! If there’s a lot, I like to scoot everything to the side of the pan and use a folded paper towel to get rid of some. Glad you enjoyed the taste!
This was a hit in our house. Made it exactly as written, and it was so popular that it has been added to our regular rotation. Thanks!
Hi Adriane,
You know it’s good when it becomes a staple! Happy to hear it. ♡
So good! I made this for myself and my husband for dinner and it was delicious. Super affordable ingredients, also. We will be adding this to our meal rotation for sure! We liked to crunch up a few tortilla chips on top of ours for some extra crunch ;)
Hi Karson,
Thrilled it’s good enough to be part of the regular rotation! The tortilla chips sound so tasty. 😊
Good flavor and easy to make!
Tip for people saying it was too watery: even with 90% lean ground turkey, mine was very soupy. I simmered it for a long time, stirring occasionally, to let the excess liquid evaporate until it was a consistency that we could eat it with tortillas without it leaking out everywhere. Worked great!
Hey Lani,
Thanks for sharing and glad you enjoyed! ♡
Can I sub chicken?
Yes, ground chicken would work great ♡
so delicious and easy to make! i will say mine was just a little soupy but pretty sure it was just because i forgot to drain the rotel 🤣 haha will definitely be making this again!
Hey Riane,
So glad you enjoyed! ♡ Yes, I always drain the Rotel and use 99/1 lean ground turkey since a higher fat turkey can also make it more soupy.
Can you make this and freeze it do you think?
Hey Alex,
Yes I think this one could be frozen, the tortillas will probably just be super soft and less distinct. If you don’t mind that then freeze away! I’d let it cool completely then freeze in individual freezer-safe containers for easier reheating.
This has become one of my go to recipes! So easy and so good! Sometimes I’ll skip the tortillas and just use tortilla chips to dip and that is so good too!
Hey Lexie,
I’m totally trying this as a dip with chips next time I make it! So genius. ♡
