What You’ll Need

Equipment
Ingredients
  • Quick oats: I use quick oats for a softer texture. Can sub old fashioned oats for a more rustic vibe or quickly pulse old fashioned oats in a blender to make your own quick oats.
  • Natural almond butter: Try to find one with only almonds as the ingredient. Many brands can sneak in extra oils and/or sugar which can change the taste. This one from Whole Foods Market is my favorite.
  • Honey
  • Vanilla
  • Cinnamon
  • Fine sea salt
  • Mini semi-sweet chocolate chips: I find that the minis help the balls stick together better.
  • 2% low fat milk: Or milk of choice

How To Make Them

  1. Mix: Add all the ingredients to a mixing bowl and and stir until everything comes together. It may seem too dry at first, but just keep mixing, pressing into the sides of the bowl to help spread it around. Only add more milk if it still isn’t coming together after a few minutes of mixing so the mixture doesn’t get too wet!
  2. Form into balls: Use a medium cookie scoop (1.5 tbsp size) or spoon to roll into 14 balls and place onto a parchment lined tray. Chill for 1 hour in the freezer.

Tips

  • Milk: Only add more milk if itโ€™s still too dry after a few minutes of stirring. If you add too much liquid, the dough will turn out way too sticky and hard to form into balls.
  • Bars: You can make these into bars instead by flattening the mixture out onto a parchment lined surface, chilling, then slicing into squares.
  • Gloves: To keep my hands clean while forming the balls, I like to wear food gloves.

  • Chill for about 1 hour in the freezer (separate with parchment if you need to stack).

Oh my gosh!! These are soo good! You did said to make a double batch and I’m so glad I did! I can see how they will be gone in a minute lol. My husband was dipping his hands in before I could put them in the freezer. They do taste better out of the freezer.
