Bacon Cheddar Breakfast Casseroles (Meal Prep Friendly)
If you need a savory, high protein breakfast all to yourself, make these bacon cheddar breakfast casseroles. They’re perfect for meal prep with minimal prep work and maximum payoff.

There’s nothing better than having a macro-friendly breakfast exactly portioned out and waiting for you in the fridge. These casseroles are the perfect prep for busy mornings or when you just don’t wanna cook breakfast every single day (guilty). Here’s everything you’ll need and how to make them.
What You’ll Need
Equipment
Ingredients
- Fully cooked thick cut bacon: I’m using the fully cooked/microwavable for convenience, but you can totally cook your own.
- Large eggs
- Egg whites: I buy the liquid egg white cartons.
- 2% low fat cottage cheese: Completely undetectable, just makes the eggs taste more cheesy!
- 2% low fat milk: Or milk of choice.
- Salt and pepper
- Frozen pepper and onion mix: Or veggies of choice.
- Shredded cheddar cheese

How To Make Them
- Preheat oven and prep dishes: Preheat the oven to 350F and grease all of your glass dishes with a little butter or oil, making sure to spread around completely so all sides are coated. The eggs will stick if you don’t!
- Microwave the bacon: Place bacon strips on a paper towel lined plate and microwave for 60 seconds, or according to package instructions. You want them to be a bit crispy. Chop or cut into small pieces and set aside.
- Whisk the eggs: To a mixing bowl, add eggs, egg whites, cottage cheese, milk, salt, and pepper and whisk until smooth.
- Build and bake: Divide the frozen pepper and onion mix, bacon, and cheese evenly among the 4 dishes. Pour the egg mixture on top (each will get roughly 1 cup), then bake for 35 minutes, or until eggs are set and tops are golden. Let rest 5 minutes and enjoy!

To Store
Let cool completely, then snap on lids and keep in the fridge up to 4 days. To reheat, remove lid and microwave for 1-2 minutes.
FAQs
- What size containers do I need?: This recipe is for 20-22oz oven safe glass dishes. I’m using these ones from Ikea.
- Can I customize them?: Absolutely! Breakfast sausage, ham, and canadian bacon are all delicious, as well as red peppers, green onion, or potatoes. Just keep in mind that the nutrition info is based on toppings listed in the recipe below.
- How can I make them dairy free?: Use a dairy free milk (like almond or cashew), a dairy free greek yogurt in place of the cottage cheese, and dairy free cheddar cheese. I’ve heard good things about the Kite Hill dairy free greek style yogurt and the Daiya dairy free cheese.
