When I’m in the mood for fun food but still have to get my protein in, protein pizza is a go-to. It’s easy to make and packs 14 grams of protein per slice! Here’s everything you need to make this bbq chicken version.

What You’ll Need

Equipment
Ingredients
  • Bread flour
  • Baking powder
  • Salt
  • Oregano, basil, garlic powder
  • Fage non-fat plain greek yogurt
  • G Hughes sugar free hickory BBQ: Or bbq sauce of choice.
  • Mozzarella cheese
  • Cooked chicken: To make it easy, I usually use pre-cooked, rotisserie or canned chicken.
  • Red onion
  • Green onion: Optional, to garnish.

How To Make It

  1. Preheat oven and prep pan: Preheat the oven to 450 F and line your pizza pan with parchment paper.
  2. Mix the dry ingredients: In a mixing bowl, whisk together the flour, baking powder, salt, oregano, basil and garlic powder so everything is evenly distributed.
  3. Add yogurt: Add in the greek yogurt and stir with a spoon until a dough forms.
  4. Form the crust: Lightly grease or dust your counter surface with flour and set down the dough. Knead the dough a bit to make sure everything’s combined well. Roll dough out into a circle the size of your pan, gently rolling in the edges to form a crust (I like to do this right on the parchment so I can just slide it on my pan).
  5. Bake: Bake dough for 12 minutes. Top with bbq sauce, cheese, chicken and onion. Bake for another 6-8 minutes, until cheese is melted and crust is golden brown. Top with optional green onion and more bbq and enjoy!

Tips

  • Bread flour: Using bread flour helps with gluten development and overall structure of the dough since it has a higher protein content. Regular all-purpose flour works as well (you can also use self-rising flour and skip the baking powder).
  • Greek yogurt: Fage greek yogurt will make your life so much easier when working with the dough. It’s a lot thicker and won’t turn into a sticky mess.
  • Forming the crust: I spread the dough out right on the parchment and just slide it onto the pan.

Instructions

  • Preheat oven to 450 F and line a pizza pan with parchment (mine is 12").
  • In a mixing bowl, whisk together flour, baking powder, salt, oregano, basil and garlic powder. Add the greek yogurt and stir together until a dough forms.
  • Lightly grease or dust counter with flour. Knead dough for a minute to fully combine, then use a rolling pin and your hands to spread into a circle the size of your pan, gently rolling the edges in to form a crust (I spread it out right on the parchment so I can just slide it on the pan).
  • Transfer to your baking sheet and bake for 12 minutes. It may inflate, but will deflate after taking it out.
  • Add bbq sauce, cheese, chicken and red onion and put back into oven for 6-8 minutes, until cheese is melted and crust is golden brown. Slice into 6 pieces, add green onion and more bbq if desired and enjoy!

Notes

  • Forming the crust: I find it easiest to spread the dough out right on the parchment, then slide it onto your pan.
  • Parchment: This is a must (or grease your pan very well) – the dough will stick to the pan without it.

I need a better approach to rolling on parchment, but the finished product was delicious and got a thumbs up from the kiddo!

I’ve made this before and love the recipe! Wondering if you think I could make a large batch of the pizza dough and refrigerate it to make smaller pizzas for dinner throughout the week? Thanks!

    1. Hi Hannah,
I haven’t tried this myself but I bet it’d work fine! I’d store it in an airtight container or bowl covered tightly with plastic and just let it sit at room temp for a few minutes to warm up before rolling out and baking. If you’re making smaller pizzas, you could even portion them out before refrigerating so they warm up quicker when you’re ready to use them. Let me know how it goes!
