One of my favorite sandwiches ever is the chipotle chicken avocado melt from Panera Bread. It’s SO GOOD. If you’ve never tried it, you have to. The only downside is the whole sandwich is like 1,000 calories…so I made a homemade version that’s 1/2 the calories, high in protein, and still super tasty.

Plus, it’s super customizable. Choose whatever cheese, veggies, sauce, or bread you prefer.

Here’s everything I use if you want to make it exactly how I do!

What You’ll Need

  • Sliced bread: I like the Nature’s Own thick cut sliced white bread.
  • Pre-cooked chicken: To make this super easy, I use the fajita seasoned grilled white chicken from Walmart. It’s already cooked, cut, seasoned, and ready to go. Shredded rotisserie chicken also works great.
  • Gouda cheese
  • Roasted red peppers: You can find these by the banana peppers, olives and other jarred things. If you like more spice, use sweet cherry peppers.
  • Cilantro
  • Avocado: To add some healthy fats and deliciousness.
  • Non-fat plain greek yogurt: You could also use low fat sour cream.
  • Chipotle peppers in adobo sauce: The La Costena ones are great.

How To Make It

  1. Preheat oven and prep pan: Preheat the oven to 350 F. Line a baking sheet with parchment paper and set aside.
  2. Make the easy chipotle sauce: Make a super easy chipotle sauce by chopping up the chipotle peppers and stirring together with the greek yogurt. You can make this however spicy you like – I only add about 1 small pepper and it’s plenty hot for me. If you like it hotter, add more. If you like it more mild, add less – probably about 1/2 pepper.
  3. Prep the chicken: Roughly chop or shred whatever cooked chicken you’re using. It doesn’t matter a whole lot what size the chicken pieces are – whatever you like on your sandwich!
  4. Prep the veggies: Chop up the cilantro and red peppers into small pieces so they’re ready to go.
  5. Build the sandwich: Place one slice of bread on the parchment lined baking sheet. Spread on the chipotle sauce, then layer on the chicken, red peppers, cilantro, cheese, avocado, and top slice of bread.
  6. Bake: Bake it up in the oven for 10-12 minutes, or until golden brown. This can vary depending on the type of bread you’re using. Just keep an eye on it, and you’ll know it’s done when the bread is toasty and the cheese is melty!

That’s it! You can make however many you want for however many people are eating. I would recommend eating these right away – the bread gets kind of soggy if you store it in the fridge.

So delicious. I will say I had to amp up the flavor a bit because it seemed a bit too plain. I used a premade guacamole instead of just mashed avocado, and I added a complete seasoning, salt and garlic powder to the yogurt to amp the flavor more. It turned out bomb๐Ÿ˜ Ill be keeping this one in the arsenal.
