What Youโ€™ll Need

Equipment
Ingredients
  • Cilantro
  • Fresh lime juice
  • Apple cider vinegar: Or white wine vinegar.
  • Honey
  • Garlic powder
  • Salt + pepper
  • Extra virgin olive oil
  • Non fat plain greek yogurt
Spoonful of cilantro lime dressing in a glass mason jar with lid and cilantro and limes in the background.

How To Make It

  1. Prep the produce: Wash and dry the cilantro and squeeze the fresh lime juice (I use a lemon squeezer).
  2. Blend: To a food processor, add the cilantro, lime juice, apple cider (or white wine) vinegar, honey, garlic powder, salt and pepper and blend just a few seconds.
  3. Slowly add oil: Use the divot in the top of the food processor to slowly drizzle in the olive oil while blending to emulsify. Add greek yogurt and blend again until smooth.

Tips

  • Cilantro: Choose fresh, vibrant cilantro for the best flavor. Rinse leaves thoroughly and pat dry, removing any wilted stems. For an extra flavor boost, include some stems along with the leaves, as they carry a lot of flavor and aroma.
  • Olive oil: A good quality olive oil makes a big difference. Look for one that specifically says for โ€œsalads and marinadesโ€ on the bottle. I use thisย Pompeian one.
  • Emulsify properly: To help keep the dressing from separating, make sure to slowly add in the oil while blending. This gives the smoothest result.
  • Lower fat option: Reduce the olive oil and add more greek yogurt for creaminess without sacrificing flavor.
