The Starbucks wrap is a go-to for me when I’m traveling because it’s delicious, and fairly macro-friendly. But I wanted to come up with a version I could make myself cause let’s face it, Starbucks ain’t cheap. Plus, I knew I could make it with more protein + volume.

And it’s seriously so filling you might not be able to finish the whole thing…

What You’ll Need

  • Joseph’s Lavash Bread: I get these at Walmart, but I’ve seen them at tons of grocery stores. Look for the ones with 60 calories for 1/2 lavash wrap.
  • Sun Dried Tomatoes: I grab the ones in the bag (not oil packed in a jar). These julienne cut ones are my go-to.
  • Fresh Baby Spinach: Or any size spinach you like.
  • Egg whites: I buy the cartons.
  • Salt, Pepper, and Garlic Powder: To season the egg whites.
  • Laughing Cow Cheese: You can usually find this in the produce area of your grocery store, kind of by the deli. You can use any kind you like! Pepper jack is my favorite, but garlic and herb is really good, too.
  • Feta Cheese: I use the Frigo brand.

Other Details

I’ve found that a 12-inch pan is the perfect size for this recipe. It makes the eggs the perfect shape to fit the wrap! Of course, if you don’t have one, you can totally still make this. You may just need to move the eggs around a bit to fit.

I also like my feta cheese crumbled super small, so I just use my fingers to break apart any larger pieces. That way, it can be spread more evenly throughout the wrap.

Instructions

  • Set a large 12-inch pan on medium-high heat and spray with cooking spray. Roughly chop sun dried tomatoes and add them to the pan, along with the spinach. Cook a few minutes, until the spinach is wilted and set aside.
  • Spray the same pan with cooking spray and add egg whites. Season with salt, pepper and garlic powder. Once eggs begin to set, add 1/2 of the spinach and tomatoes to the middle third and fold sides on top so it looks like an omelet. Cook for a minute, then flip and cook another minute. Remove from heat.
  • Spread the laughing cow cheese wedge in the middle 1/3 of the lavash bread. Layer the other 1/2 of the spinach and tomatoes, then the feta cheese. Place the egg whites on top of the feta and fold the other sides of the lavash bread on top.
  • Set your wrap back on the pan on high heat to toast for about a minute each side, until golden brown. Enjoy by itself or with whatever toppings/sauces you love!

Notes

  • I keep the seasonings simple for the eggs. Feel free to add whatever you prefer!
