You guys know I’m obsessed with a quick and healthy tuna salad. So simple, but a few small add-ins can make a world of a difference! This version features crunchy honey crisp apples and salty roasted almonds, but you can totally switch it up based on your preferences. Here’s how I love to make it. โ™ก

What Youโ€™ll Need

  • Tuna: Canned, packed in water. I use the 5oz cans of albacore.
  • Celery
  • Red onion
  • Honey crisp apple
  • Roasted almonds: Instructions are included below on how to roast your own if you’d like. Can sub sliced almonds.
  • Light mayo: Or miracle whip.
  • Non fat plain greek yogurt
  • Fresh lemon juice: A splash of apple cider vinegar works too if you don’t have any lemons on hand!
  • Dijon mustard
  • Salt + pepper

How To Make It

  1. Open the tuna: I can’t believe I’m putting this as a whole step, but that’s how easy this is to make! Open the cans of tuna and drain well.
  2. Chop: Finely chop the celery, red onion, apple, and almonds. You can make these however small or large youโ€™d like (I like them super small so I get a little in every bite).
  3. Mix: In a mixing bowl, add the tuna, chopped veggies, almonds, mayo, yogurt, lemon juice, mustard, and season with a pinch of salt and pepper. Stir until combined, making sure to break up any big pieces of tuna so you donโ€™t get a surprise chunk of chalk in your sandwich (yuck).
  4. Chill: If time allows, chill for a few hours or even overnight before serving. Gets nice and cold and the flavors will develop more!

To Store

Store tuna salad in an airtight container in the fridge for up to 4 days.

To Make Your Own Roasted Almonds

Add raw almonds to a parchment lined baking sheet, toss with a small drizzle of olive oil, big pinch of sea salt and bake at 350 F for 10-12 min (until toasted and smelling delicious).
