Easy Breakfast Quesadilla
This easy breakfast quesadilla is made all in the same pan and completely customizable based on your preferences.

If you’ve eaten the same breakfast too many times in a row, try switching it up with this super easy, super delicious breakfast quesadilla.
Here’s everything you’ll need and how I personally like to make it.
What You’ll Need
Equipment
- Frying pan: Use one about the size of your tortillas. I use a 10-inch pan.
Ingredients
- Eggs
- Fat free milk: Or milk of choice.
- Deli honey ham
- Crumbled bacon: This applewood smoked flavor is so good.
- Chives: Optional, but highly recommended.
- Salt, pepper, garlic powder: To season.
- Low carb tortilla: I use these Mission whole wheat ones. Use whatever tortillas you love!
- Mozzarella cheese
- Salsa + sour cream: For dipping.

How To Make It
- Heat up your pan: Set your frying pan on medium heat first thing so it’s hot and ready by the time you’ve got the rest prepped.
- Scramble the eggs: In a bowl, scramble the eggs with a little milk until combined. Set aside.
- Chop the toppings: Chop the ham and chives (or toppings of choice).
- Start cookin’: Spray your pan with some olive oil or cooking spray and add the scrambled eggs. Don’t stir it around, just let it start to cook. Sprinkle on the chopped ham, bacon bits and chives, and season with a pinch of salt, pepper and garlic powder.
- Add the tortilla: Once the eggs are mostly cooked through, add the tortilla right on top. Then gently flip so that the tortilla is cooking on the bottom. Add your mozzarella cheese and fold in half. Let it toast for just a minute, then flip and toast the other side. Remove from heat, slice, and enjoy with salsa and/or sour cream!
Tips
- Flipping: Sometimes I use 2 spatulas to flip for a little extra support.
- Customize: Use different meats, cheeses, herbs, and seasonings for a personalized breakfast quesadilla.
- Tortillas: I use the Mission whole wheat carb balance tortillas, but if you’re not worried about carbs, I would highly recommend the La la’s traditional style tortillas.
