These are an easy way to use up leftover chicken, rotisserie chicken, or even canned chicken. Like most of my recipes, this one is easy to customize with whatever you have on hand or prefer!

Here’s everything you’ll need and how to make them.

What You’ll Need

Equipment
Ingredients
  • 12-count pack of dinner rolls: I like theย Kingโ€™s Hawaiianย brand. Make sure to get the ones that say โ€œSavory Butter Rollsโ€. Donโ€™t confuse the brand name with the type of rolls! They make both savory butter rolls and sweet Hawaiian rolls.
  • Cooked chicken breast
  • Center cut bacon
  • Green onions
  • Fat free ranch: Can sub reduced fat, or full fat.
  • Plain non fat greek yogurt
  • Shredded Mozzarella cheese
  • Ranch seasoning: I likeย Hidden Valley.

How To Make Them

  1. Prep oven and pan: Preheat the oven to 400 degrees F. Grab a baking sheet and line with parchment paper (optional, but makes for super easy clean-up).
  2. Make the chicken filling: Add chopped chicken and bacon, green onion, ranch, and greek yogurt to a mixing bowl and stir to combine.
  3. Cut rolls: With a large bread knife, slice the dinner rolls in half horizontally, so there is a top and bottom half. Place the bottom half on the baking sheet.
  4. Assemble sliders: Spread the chicken mixture evenly on the bottom half of rolls. Layer on the mozzarella and add back the top half of the buns. Hit it with a mist of cooking spray and sprinkle of ranch seasoning.
  5. Bake: Cover with foil and bake for 10 minutes, then remove foil and bake for an additional 5 minutes or until golden and crispy. Cut into individual sliders, top with more sliced green onions, and enjoy!

Tips

  • Chicken: If you need to cook chicken before you make this, you will need about 20 oz raw chicken. Season your chicken with whatever seasonings you love! This dirty bird dry rub is super delicious on grilled chicken.

To Store

These are best fresh, but can be stored in an airtight container for 2-3 days. Reheat in the oven or an air fryer to bring some texture back, but you could warm them up in the microwave as well.
