Easy Chipotle Lime Beef Quesadillas
If you’re looking for a delicious way to switch up taco night, these chipotle lime beef quesadillas are about to become a new favorite. They’re loaded with smoky chipotle ground beef, melty Monterey Jack cheese, and a squeeze of fresh lime to brighten everything up.

Crispy on the outside, cheesy on the inside, and packed with protein, these quesadillas are easy enough for busy nights and yummy enough to earn a spot in the regular rotation. Just quickly brown some ground beef, season it up, and pack into a flour tortilla with shredded cheese. Easy peasy! Here’s everything you’ll need to make them. ♡

Ingredients
- 93/7 lean ground beef: 93/7 is my favorite for these. If you use a leaner beef, you may need a splash of broth or water to help evenly distribute the seasonings. If you use a fattier beef, you’ll need to drain some of the fat off.
- Chipotle peppers in adobo sauce: These have a mild kick with the measurements I have listed in the recipe below, but can easily be adjusted based on your preference! Use more chipotle peppers for spicier beef and less for more mild.
- Minced garlic
- Taco seasoning: I always recommend homemade – such an easy way to elevate the flavor of the beef and takes 5 minutes to throw together.
- Fine sea salt
- Fresh lime juice
- Soft taco size flour tortillas
- Monterey Jack cheese: Fresh grated is best!

How To Make Them
- Brown the beef: Heat a frying pan on medium high heat and add the beef. Fully cook, breaking apart into small pieces (I use a meat chopper for perfect crumbles every time), until browned.
- Season: Add minced chipotle pepper, a little of the adobo sauce, garlic, taco seasoning, and salt to the beef and mix until everything is coated evenly. Cook for 1 more minute, then remove from the heat and stir in the fresh lime juice.
- Build your quesadillas: Heat a frying pan on medium high (can remove the beef and use the same pan for one less dish to clean) and add a tortilla to warm up for 30-ish seconds. Flip it over, stuff with a serving of beef (~1/2 cup), 1/3 cup of Monterey Jack, fold in half and toast each side until golden brown and cheese is melty. Remove from heat and repeat with remaining tortillas.
- Serve!: Slice your quesadilla into smaller pieces and enjoy with sour cream, salsa, or your favorite sauce!

Tips
- Meal prep: If you’re making these for just you, or wanting to meal prep them, store the extra ground beef and cheese separately. Quickly warm the beef in the microwave and build another quesadilla whenever you need!
- Adjust heat: Use less chipotle pepper for a milder quesadilla, or more for a spicer one. Just be careful not to use too much, otherwise the beef can get a bit too strong and smoky.

- 1 lb 93/7 lean ground beef
- 1 chipotle pepper in adobo sauce (10 g) minced
- 2 tsp adobo sauce from the chipotle pepper can
- 2 tsp minced garlic
- 1 tbsp taco seasoning
- 1/4 tsp fine sea salt
- juice from 1/2 a lime
Quesadillas
- 4 soft taco size flour tortillas
- 1 1/3 cups Monterey Jack cheese (113 g) freshly grated
Instructions
- Heat a frying pan on medium high heat. Add the beef and fully cook, breaking apart into small pieces.
- Add the minced chipotle pepper, adobo sauce, garlic, taco seasoning, and salt. Stir everything together and cook for 1 more minute.
- Remove from the heat and stir in the fresh lime juice.
- Heat a separate pan (or remove the beef and use the same one) on medium high heat. Add a tortilla and warm for about 30 seconds, flip, then fill one half with ~1/2 cup of the beef and 1/3 cup cheese. Fold in half and toast both sides until golden brown.
- Remove from heat and repeat with remaining tortillas. Slice your quesadilla into smaller pieces and enjoy with sour cream, salsa, or any other sauces you love!
