Skip the extra meat handling and use ground beef for an easy, hassle free dinner. Perfect for busy weeknights (or whenever that Panda craving hits).

What You’ll Need

Equipment
Ingredients
  • Olive oil
  • Broccoli florets
  • Salt + pepper
  • Lean ground beef: I use 93/7.
  • Yellow onion
  • Beef broth
  • Soy sauce: I use reduced sodium.
  • Brown sugar: Just a little balances the sauce.
  • Garlic
  • Ginger
  • Red pepper flakes: Optional, if you like more spice.
  • Cornstarch: Thickens the sauce.
  • Green onion: To garnish.

How To Make It

  1. Make the sauce: Since the cooking process goes quick, I like to have my sauce ready. In a bowl orย glass measuring cup, whisk together beef broth, soy sauce, brown sugar, garlic, ginger, red pepper flakes (if you like spice), and cornstarch. Set aside.
  2. Cook the broccoli: Set your pan on medium high and add oil. Once oil is hot, throw in the broccoli, seasoning with a pinch of salt and pepper. Cook for 3-5 min, until broccoli is tender and beginning to brown. Remove from pan and set aside.
  3. Cook the beef: To the same pan, add the beef and diced onion. Cook beef, breaking apart into small pieces until fully browned (about 5 minutes) and season with another pinch salt and pepper.
  4. Add the sauce: Add the cooked broccoli back to the pan along with the sauce. Cook until sauce has thickened, stirring everything together.
  5. Garnish and serve: Garnish with green onion and serve over rice (or whatever you love)!

Tips

  • Fresh produce: I recommend fresh garlic and ginger instead of jarred or pastes. I also like fresh broccoli in this recipe for the best texture.
  • Prep first: The cooking process goes fast, so I get everything chopped and ready to go before I start cooking.

To Store

Once cooled, store leftover beef and broccoli in an airtight container in the fridge up to 4 days. Reheat in the microwave or on a hot pan with a little splash of broth or water.
