Easy High Protein Breakfast Muffins
These easy high protein breakfast muffins are sweet, savory, and contain 16 grams of protein each! Perfect for meal prep and busy mornings.

If you’re a fan of McDonald’s McGriddles, you’ll love these. The pancake base is a little sweeter, but the turkey sausage and bacon adds that savory goodness that I always love for breakfast. The secret is to use bacon bits along with the turkey sausage. You get a little bit of bacon in every bite!
Plus, each one packs 16 grams of protein to fuel your day. Here’s everything you’ll need and how to make them.
What You’ll Need
Equipment
- 12-count muffin tin
- Meat chopper: Optional.
Ingredients
- Kodiak pancake mix: Just the regular buttermilk pancake mix.
- Shredded cheese: I use the fiesta blend reduced fat cheese.
- Turkey sausage: I’ve tried a few different turkey sausages in this recipe, and the one I like best is the Jennie-O brand. It helps the muffins hold moisture and has great taste.
- Bacon bits: Love the Hormel applewood smoked bacon bits.
- Milk: I use the Fairlife fat free milk. Can sub milk of choice.
- Maple syrup: I use Maple grove farms sugar free. Can sub regular maple syrup.
How To Make Them
- Preheat oven and prep pan: Preheat the oven to 400 F and grease muffin tin compartments, spreading around completely so nothing sticks.
- Cook the turkey sausage: Cook in a frying pan on medium high heat, breaking apart into small pieces until fully cooked (about 5 minutes). Remove from heat.
- Combine all ingredients: In a medium mixing bowl, combine the cooked turkey sausage with the rest of the ingredients and stir together until combined. Scoop evenly into 12 muffins.
- Bake: Bake these at 400 F for about 18 minutes, or until golden brown on top. Let cool for a few minutes, remove from muffin tin, and enjoy warm with more maple syrup!
To Store
Store leftovers in an airtight container for 3-4 days. To reheat, microwave in 30 second increments until desired warmness.

Hi Victoria,
You know it’s good when the husband approves. Thanks for trying this one out, glad you loved! ♡
These and the other protein muffins have been a regular in our house for breakfast! So easy for all of us… age 2 to 35; we all enjoy!
PS I’m the hygienist that works for your dad 🥸
Hi Rozan,
Happy to hear these have been staples for you! And oh my goodness small world!! 🦷🪥
These are great dipped in a bit of maple syrup!
Hi Lauren,
I agree!! Love a sweet & savory moment. ♡
These are pretty good! The macros are soo good for a muffin and I feel good feeding them to my family. 2 of these keeps me feeling full way longer than 2 fruit muffins. I just wish they had a bit more flavor. I might have made them wrong, will tweak for next time and see!
The macros are almost too good to be true! Sorry to hear they didn’t have as much flavor – different brands of ingredients can change the taste. I’d try adding a little salt next time to see if that helps!
This breakfast recipe is delicious & easy! It has quickly become a staple in our home. My husband asks for these every single week they’re that good!! Best protein muffin recipe i’ve tried by far!
Hey Grace,
