Turkey sausage is an awesome alternative to regular sausage if you’re trying to eat healthier or consume less fat. Turkey is a super lean source of protein, and with just a few spices and seasonings, we can turn it into a delicious breakfast sausage.

What You’ll Need

  • Ground Turkey: I like to buy 99% lean ground turkey. It contains the least amount of fat and leaves room for cheese, eggs, avocados, and other sources of fat I might add to my breakfast.
  • Maple Syrup: I use sugar-free. You can sub pure maple syrup if that’s not your jam.
  • Salt + Pepper: Use coarse kosher salt if you’ve got it. I use fine ground black pepper, but freshly cracked pepper would work great.
  • Ground Thyme: Adds an herby flavor.
  • Rubbed Sage: Rubbed sage is a bit less intense than ground sage. If you like a more bold, earthy flavor, use ground sage.
  • Garlic Powder: Garlic just goes well with everything.
  • Paprika: Use smoked if you have it. Adds a bit of color too.
  • Red Pepper Flakes: Just a touch, but if you like more spice, add more. You could also add more heat by adding some cayenne pepper.

How To Make It

It’s super simple to throw together this easy homemade turkey breakfast sausage. Here’s all you have to do:

  1. Add your turkey and all other ingredients to a small bowl. Mix it with either your hands or a fork until the meat is fully coated in seasonings.
  2. Cook the turkey on medium high heat, crumbling into small pieces, until cooked through (about 5 minutes). I like to use a meat chopper for easy crumbling :)

That’s it! You’ve now got lean ground turkey that tastes like breakfast sausage.

What To Pair It With

Turkey sausage can be added to so many different savory breakfast meals to add more protein and flavor. Here are some meals I use turkey sausage in and love!

  • Omelet: A quick omelet with cheese and bell peppers is great on its own, but you can add so much protein and volume by sprinkling some turkey sausage on there.
  • Breakfast Burritos: Toss some sausage in a warmed tortilla with some eggs and cheese.
  • Turkey Sausage Breakfast Casserole: I use pre-made turkey sausage in my breakfast casserole recipe, but this turkey sausage would be just as delicious.
  • Breakfast Skillet: This turkey sausage is insanely delicious in my breakfast skillet recipe.
  • Breakfast Sandwiches: Shape the turkey sausage into patties and throw on an english muffin with an egg and slice of cheese.

Ground Turkey Notes

99% lean ground turkey will be more dry since the fat content is so low. I’m almost always pairing my turkey sausage with other foods so I don’t notice, but you might if you’re eating it plain. If you prefer, you can use a ground turkey that has a higher fat content.

You could also add just a touch of olive oil to the meat mixture before cooking.

I’ve had great results with the Jennie-O brand from Walmart.
