These bars are deliciously chewy and absolutely irresistible. Both kid and adult approved. Reminds me of cookie dough, but made with better-for-you ingredients to fuel your day. Here’s everything you’ll need and how to make them!

What You’ll Need

Equipment
Ingredients
  • Banana: Sounds strange, but helps bind the bars together and add some sweetness. You won’t even know it’s in there.
  • Peanut butter: My favorite is this Smucker’s natural creamy peanut butter made with just peanuts and salt.
  • Honey
  • Vanilla
  • Sea salt
  • Old fashioned oats
  • Ground flax seed
  • Vanilla protein powder: I use the PEScience gourmet vanilla.
  • Cinnamon
  • Mini semi-sweet chocolate chips

How To Make Them

  1. Blend the oats: Blend the oats in a high speed blender or food processor to make oat flour.
  2. Mix wet ingredients: Mash the banana until smooth and add to a mixing bowl. Add peanut butter, honey, vanilla and salt, and mix until smooth.
  3. Add dry ingredients: Add oat flour, ground flax seed, protein powder, cinnamon and chocolate chips. Stir until combined.
  4. Form the bars: Press mixture into a parchment lined baking dish, using a silicone spatula to flatten. Let set in the fridge before cutting into 12 squares. Enjoy!

Tips

  • Measuring: For most accurate measurements, I use aย kitchen scale to weigh ingredients. Gets the right consistency/texture every time.
  • Chill: These are most delicious after they’ve chilled in the fridge for a couple hours.
  • Silicone spatula: Use a silicone spatula to press bars into your pan so it doesn’t become a sticky mess.

To Store

These energy bars are best stored in an airtight container in the fridge up to 2 weeks. Can also freeze up to 6 months.

  1. Can I skip the flax seed or does it affect the final consistency? Also how long do they last in the fridge?

    1. Hi Ana,
I’d recommend adding the ground flax seed since it enhances the taste and texture, but if you’d like to leave it out I’d add 1/4 additional oats! These last up to 2 weeks in the fridge or 6 months in the freezer.
