Easy Southwest Chicken Burritos

These easy southwest chicken burritos are one of my go-to high protein meals that hits the spot every time. 30 grams of protein per burrito, and so good.

As you guys know, I like to meal prep some things at the start of each week to take some of the stress off of cooking every single meal. One thing that I made this past week was my 20-minute Southwest Chicken, so I wanted to show you guys a meal I like to use it in!

These burritos are a breeze to make when the chicken is already prepped. The only other thing that needs to cook is some white rice, which I had prepped this week as well. Other than that you’ve just gotta assemble a few different things!

You could even make these lower carb by skipping the rice and using a low carb wrap or tortilla. Up to you!

What You’ll Need

  • 20-Minute Southwest Chicken: My easy 20-minute Southwest Chicken recipe is quick and simple to make. Not only can you use it for this, but it’s an easy way to add protein to salads, tacos, quesadillas, you name it.
  • Tortillas: I use these La la’s soft taco tortillas, but feel free to use whatever wraps/tortillas you like best.
  • 3-ingredient Southwest sauce: I make a quick sauce by combining plain greek yogurt, salsa, and taco seasoning. Recipe linked here :)
  • Cooked white rice: If you want to get a little fancy, add some lime juice and chopped cilantro to your rice to make it cilantro lime rice.
  • Shredded cheese: Use whatever cheese you love. I use a reduced fat fiesta blend cheese.

How To Make Them

  1. Prep the Southwest Chicken and rice: If you haven’t already, make the 20-minute Southwest Chicken and cook up some white rice. I just use a rice cooker.
  2. Prep the sauce: Make the quick 3-ingredient Southwest sauce so it’s ready to go.
  3. Assemble the burritos: Make the burritos by spreading about 1 tbsp sauce in the middle of a tortilla, followed by 2 tbsp rice, about 1/2 cup Southwest chicken, then cheese. Roll up tightly. The measurements for this recipe make 4 burritos, but make less or more depending on your needs.
  4. Toast and enjoy: Toast the burritos in a frying pan on medium high heat for about a minute on each side, until golden brown. Enjoy with more Southwest sauce for dipping!

That’s it! You can of course customize these how you want with your choice of tortilla, how much rice (or none), type of cheese, etc. They are so good and hit the spot every time. Plus, they’ve got 30 grams of protein to keep you full and satisfied!
