Everyone needs an easy stovetop beef chili recipe for fall and winter. It’s cozy, comforting, and absolutely delicious with some sour cream and cheese.

I’m 100% biased but I think this chili recipe is the best, especially for being a little healthier. It’s so easy and full of protein from the beef, beans, and bone broth.

Of course, you can easily tweak this recipe with whatever you prefer or have on hand. Here’s everything you’ll need and how to make it!

What You’ll Need

Equipment
  • Ground Beef: I use 93% lean ground beef.
  • Onion: White or yellow.
  • Garlic
  • Tomato paste: Adds a bit of sweetness and deepens the tomato flavor.
  • Light red kidney beans
  • Fire roasted diced tomatoes: The fire roasted ones add a smoky flavor that I love.
  • Beef bone broth: Bone broth is gut healthy with 9 g protein per cup. Can sub regular beef broth.
  • Chili powder, cumin, onion powder, garlic powder, salt and pepper: To season.

How To Make It

  1. Cook the beef: Heat a large pot on the stovetop on medium high heat. Chop up your onion and add that in with the ground beef and minced garlic. Cook the beef, breaking apart into small pieces (I use a meat chopper) until fully cooked – about 5 minutes. Don’t drain any fat or juices – this really helps the flavor of the chili!
  2. Create the soup: Add the tomato paste, the drained/rinsed kidney beans and the fire roasted tomatoes (undrained). Pour in the bone broth and stir it all together.
  3. Season and simmer: Season the chili with chili, garlic, and onion powder, cumin, salt and pepper, and mix it all up. Turn down the heat to low and cover with a lid. Let it simmer for at least 30 minutes, stirring occasionally.

You can cook this chili longer if you have time! The longer it simmers, the better it gets. It really thickens up and the flavors develop. You can let it simmer up to 60 minutes. But at the very least, leave it on there for a good 30.

Toppings

  • Light sour cream (or plain greek yogurt)
  • Shredded cheese
  • Green onion
  • Cilantro
  • Lime
  • Crackers or tortilla chips

To Store

Once cooled, store extra chili in an airtight container in the fridge for 3-4 days. Reheat on the stove or covered in the microwave.

Try this recipe, y’all 🤩 I seasoned my ground beef lightly with salt and pepper. The seasoning ratio added to what I did was perfect for my preference, but it’s a great combo/ratio regardless! Wish I’d had chives to add 😢 but still amazing either way with sour cream and cheddar cheese 😊
