Famous Rotel Queso Dip (5 Ingredients)

You really can’t beat the classic Rotel queso dip – but you can make it even more addictive and higher in protein. I upgraded the famous 3-ingredient version into a 5-ingredient version that’s even more flavorful and packs 24 grams of protein per serving.

If you’re looking for the ultimate crowd-pleaser, this is it. It only takes minutes to throw together and worth every second. Here’s everything you’ll need and how to make it!

What You’ll Need

Equipment
Ingredients
  • Lean ground turkey: I prefer 99% lean for the most protein.
  • Taco seasoning: My homemade taco seasoning is the best! Can also sub 1 taco seasoning packet.
  • Velveeta cheese
  • Reduced fat cream cheese: I highly recommend the Philadelphia brand for best results. I’ve found the value brands aren’t nearly as smooth and creamy.
  • 10oz can Rotel: I use the original for a little spice – if you like a milder dip, use the mild Rotel.

How To Make It

  1. Cook the turkey: Heat a large skillet on medium high, lightly spray with oil and add the ground turkey. Fully cook, breaking apart into small pieces (I use a meat chopper). Season with taco seasoning.
  2. Add the rest: Cut the velveeta into cubes and add to the skillet, reducing the heat to medium-low. Add the cream cheese and Rotel. Stir everything as it cooks, until cheeses are melted and smooth.
  3. Serve: Top with fresh tomato and cilantro if you wanna make it pretty, then enjoy with tortilla chips, pretzels, or whatever you love!

FAQs

  • Can I make this queso dip in a slow cooker?: Yes! Just add the cooked turkey to your slow cooker along with the rest of the ingredients and cook on low, stirring occasionally, until melted and smooth. Switch the heat to warm for serving.
  • Is this dip spicy?: With the original Rotel, this dip does have a slight kick. If you like a milder dip, use the mild Rotel! Or if you love the burn, use the hot.
  • How do I keep it from getting grainy or too thick?: Make sure to stir often while heating and avoid high heat. I also highly recommend using the Philadelphia brand of cream cheese – it’s the smoothest and creamiest! If it thickens too much, whisk in a splash of milk until smooth again.
  • What else can I serve with Rotel queso dip?: Tortilla chips are a classic, but it’s also delicious with pretzels, bell pepper strips, drizzled over tacos, nachos, or even baked potatoes!

To Store

Once cooled, store in an airtight container in the fridge up to 4 days. Reheat gently on the stove or in the microwave with a little splash of milk to loosen it up.
