You can enjoy these beef and bean burritos right away, and they are delicious. But these freeze great for 1-2 months if you’re wanting to prep some grab and go meals for busy days.

What You’ll Need

  • Extra lean ground beef: You could use any ground beef you like, but to keep these lower in calories and high protein, I use extra lean.
  • Onion: White or yellow.
  • Garlic
  • Taco seasoning: My homemade taco seasoning is amazing in this. Sub 1/2 taco seasoning packet if you want!
  • Red enchilada sauce: If you like heat, use a hotter one! I just buy a small can.
  • Can of Rotel: I use the mild – the Original has a tiny bit more spice.
  • Refried beans: I use fat free refried beans to keep calories a tad lower. Can sub regular refried beans.
  • Whole wheat tortillas: These Guerrero ones hold up really well – try to find sturdy tortillas for this recipe.
  • Monterey Jack cheese: Or cheese of choice.

How To Make Them

  1. Cook the beef: Cook the beef with the onions and garlic, breaking beef apart into small pieces – I love this meat chopper to make this super easy. Cook until beef is fully browned (about 5 minutes). Drain any excess liquid by sliding the meat to one side of your pan, tilting the pan, and using a folded paper towel to absorb/remove liquid.
  2. Season and add beans: Season the beef with taco seasoning, red enchilada sauce, canned Rotel (drained), and mix. Add in the refried beans and stir until fully combined. Remove from heat.
  3. Assemble burritos: Divide the beef and bean mixture evenly among 6 tortillas and top each one with shredded cheese. Fold up each burrito and use a hot pan to toast for a minute on each side until golden brown.

To Freeze

  • Let the beef and bean mixture cool for about 10-15 minutes before wrapping burritos. Less condensation will build while freezing, and you’ll avoid any sogginess when re-heating.
  • Wrap each burrito with cheese like you normally would, then wrap each burrito in parchment paper (not tin foil).
  • Place all your burritos in a gallon ziploc bag and store in the freezer up to 3 months.

To Reheat

  • Reheat burritos in the microwave for 1-2 minutes, flipping over halfway.

I like to make these in a big double or triple batch if I am freezing them! My husband eats them so fast, they usually don’t even last a whole 2 weeks.

I hope you guys enjoy these as much as we do. Of course, make them your own by using your favorite cheese, tortillas, and type of refried beans. They are so easy and yummy.
