If you love s’mores, these are an absolute must-try. Made with traditional graham crackers and chocolate and a fun protein twist for the fluffy “marshmallow” filling! After seeing them all over my social media, I finally gave them a try and wow they did not disappoint!

Not only are they insanely delicious, but they’re so easy to make. No baking required – just a few simple steps, and you’ve got the easiest, most perfect summer treat. Here’s everything you’ll need and how to make them!

What You’ll Need

Equipment
Ingredients
  • Graham crackers
  • Chocolate chips: I love semi-sweet.
  • Coconut oil
  • Light cool whip
  • Vanilla protein powder: See notes below.
  • PBFit: Optional, but delicious.

How To Make Them

  1. Prep pan: Line sheet pan with parchment and make sure there’s space in your freezer where it can fit.
  2. Crackers: Place 5 graham cracker sheets onto the pan, making sure they’re touching.
  3. Chocolate: Add chocolate chips and coconut oil to a micrwave safe bowl or dish (I use a pyrex glass measuring cup) and microwave in 30 second intervals, stirring in between, until melted (I usually need 60 seconds total). Pour and spread evenly over the graham cracker layer. Set in the freezer to harden while you prep the “marshmallow” fluff.
  4. “Marshmallow” fluff: Add protein powder and PBFit powder to the cool whip and mix until smooth. Spread over the chocolate layer and add 5 more graham cracker sheets on top, leaving a tiny space between them to help with cutting.
  5. Freeze: Freeze at least 1 hour before slicing into squares and enjoy!

Protein Powder

Any protein powder works, but I recommend using a vegan protein powder, as they are a lot thicker and create a delicious whipped consistency when mixed with the cool whip. I’m using the 1UP vegan vanilla protein powder.

Tips

  • Freeze chocolate layer: After spreading on the chocolate, freeze while you mix the cool whip. This makes it much easier to spread on the next layer.
  • Add salt: Optional, but I love adding a pinch of flaky salt to the chocolate layer right before freezing to boost flavor.
  • Customize: Use your favorite protein powder, chocolate and graham crackers!

To Store

Store frozen protein s’mores in an airtight container in the freezer up to 1 month. If stacking, separate layers with parchment. Let sit a couple minutes at room temp to soften slightly before eating.
