Greek Salad Dressing
This easy Greek salad dressing is made with simple ingredients and can be made in 5 minutes. Perfect for salads, chicken and veggies!

The great thing about a homemade dressing is that you know exactly what’s in it. This recipe calls for simple ingredients you can feel great about using and feel amazing after eating. Plus, it only takes an extra 5 minutes!
What You’ll Need
- Extra virgin olive oil: A high quality extra virgin olive oil is the best for salad dressings. The Pompein extra virgin olive oil is a great one. It will specifically say on the front of the bottle that it’s for salads and marinades.
- Red wine vinegar: Balances out the olive oil and adds that tangy vinaigrette taste.
- Lemon juice: I love to add just a little lemon juice, but this is still delicious without it.
- Minced garlic
- Mustard: Dijon is great, but a lot of the time I just have yellow mustard on hand so I use that!
- Dried oregano
- Salt + pepper
How To Make It
- Combine all ingredients EXCEPT olive oil. Whisk all of that together well in a bowl.
- Add in the olive oil SLOWLY, while you whisk constantly. This is going to emulsify the dressing. In other words, it helps the olive oil break down into tiny droplets and become evenly dispersed.
That’s it! Super easy.
Tips + Storage
- If the dressing separates: If you whisk in the olive oil slowly but the dressing is still separating, just give it a good shake in a jar or container before serving. I’ve also poured it into a blender and gave it a quick whirl to combine everything.
- To store: If your dressing separates while storing, just give it a good shake right before using. I like to store mine in a mason jar or tight bottle so it’s easy to shake up. Store for up to 5 days.
