Healthy Carrot Cake Protein Baked Oats
These healthy carrot cake protein baked oats are made with simple ingredients for an easy, healthy breakfast to satisfy your sweet tooth.

Make a batch of these at the beginning of the week for a quick grab and go breakfast that you can enjoy hot or cold (cold is my favorite). Top with some vanilla greek yogurt and you’ve got an easy 20+ grams of protein to start your day.
What You’ll Need
Equipment
- 8×8 baking dish
- Blender: I love my Vitamix.
Ingredients
- Milk: I use Fairlife fat free milk. Can sub milk of choice.
- Non fat plain greek yogurt
- Eggs
- Maple syrup: I use sugar free.
- Vanilla
- Old fashioned oats
- Vanilla protein powder: See protein powder notes below.
- Cinnamon
- Ginger
- Nutmeg
- Cloves
- Sea salt
- Baking powder
- Whole carrots: It’s important to buy whole carrots and freshly grate them. Pre-shredded carrots at the store will not have the same taste and texture.
- Walnuts: Or pecans.
- Raisins
- Vanilla greek yogurt: Optional, for topping.

How To Make Them
- Preheat oven and prep pan: Preheat oven to 375 F and line an 8×8 baking dish with parchment paper.
- Blend ingredients: To a large blender, add milk, yogurt, eggs, maple syrup, vanilla, oats, protein powder, spices, baking powder and salt. Blend on low speed for 5-10 seconds until just combined.
- Add the rest: Gently stir in the shredded carrots, chopped walnuts (or pecans) and raisins.
- Bake: Pour the batter into lined baking dish, making sure to get all that goodness outta there with a spoon or spatula. Bake for 27-30 minutes. Let cool for about 5 minutes and enjoy! I top mine off with some vanilla greek yogurt, cinnamon and more chopped nuts.
Protein Powder
- What protein is best?: The best protein powder for baking is a whey/casein blend. It results in a more even texture and doesn’t dry out as much as 100% whey. The PEScience gourmet vanilla protein is definitely my favorite in this recipe.
Tips
- Carrots: Whole carrots freshly grated are best. I like them grated on the small side of my grater.
- Customize: Switch up the add ins! Use pecans, chocolate chips, shredded coconut, or whatever else you love.

Can this recipe be meal prepped & frozen? I’m considering using this recipe to help stock our freezer before baby arrives!! Thanks in advance!
Hi Hayle,
Yes this can be frozen if needed. Just cool completely after baking and cut, wrapping each piece in plastic wrap or foil. Keep in a freezer-safe airtight container or ziploc up to 3 months. Thaw in the fridge overnight or defrost in the microwave whenever you’re ready! Hope this helps and good luck with your new one! ♡
I liked it but it stuck to the pan, maybe it’s the type of protein in using. However it’s a tasty treat that keeps you full for longer.
Hi Ana,
I’m sorry to hear it stuck to the pan. To help prevent sticking, make sure to fully line the pan with parchment, or you could also lightly grease the pan before adding the parchment for extra insurance. Hopefully this helps!
Substituted nuts for dates! Delish!
Hey Lauren,
Sounds so good!!
