Individual Breakfast Casseroles
These individual breakfast casseroles are perfect for meal prep, so easy to make, and completely customizable!

What You’ll Need:
Equipment
Ingredients
- Frozen hash browns: I like the ones with onions and peppers.
- Frozen turkey sausage patties
- Bacon: I use pre-cooked for convenience.
- Roasted red peppers: Should be by the pickles and other jarred things.
- Spinach
- Cheddar cheese
- Large eggs
- Egg whites: I buy the liquid egg white cartons.
- Fat free milk: Or milk of choice.
- Salt and pepper
How To Make Them
- Preheat oven and prep containers: Preheat oven to 350 F and grease 4 glass containers well, spreading it around to make sure all the sides are coated.
- Defrost the potatoes and sausage: To defrost the sausage patties, I set them on a paper towel-lined plate and microwave ~90 seconds. For the potatoes, I cook them on a hot frying pan with a little salt until they’ve defrosted.
- Microwave the bacon: Set the pre-cooked bacon slices on a paper-towel lined plate and microwave for 60 seconds.
- Chop everything up: Chop up the turkey sausage patties, bacon, red peppers, and spinach. I keep the sausage and bacon separated into 4 parts (each container will get 1 sausage patty and 2 slices of bacon).
- Assemble the casseroles: Divide all the toppings up evenly amongst the 4 containers. Layer potatoes, sausage, bacon, peppers, spinach, then cheese. Whisk the eggs, egg whites and milk up with some salt and pepper and pour evenly into each breakfast casserole (each will get about 3/4 cup).
- Bake: Bake the breakfast casseroles for 30-35 minutes, until eggs are set and tops are golden brown.
To Store
Let cool completely, then snap on lids and keep in the fridge up to 4 days. To reheat, microwave for 1-2 minutes.

- 2/3 cup spinach (20 g)
- 2/3 cup shredded cheddar cheese (56 g)

- 2 cups egg whites (490 g)
- 1/4 cup fat free milk (60 g) or milk of choice
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions

- Heat a frying pan on high heat, spray with oil and add frozen hash browns, stirring occasionally until defrosted. Season with a big pinch of salt and remove from heat.
- Defrost sausage patties on a paper towel lined plate in the microwave for ~90 seconds. Add bacon slices to another paper towel lined plate and microwave ~60 seconds, until warm.
- Chop all toppings, keeping the sausage and bacon separated in 4 equal parts (each casserole gets 1 patty and 2 slices bacon). Assemble the casseroles by layering equal parts hash browns, sausage, bacon, peppers, spinach, and cheese.
- In a mixing bowl, whisk together eggs, egg whites, milk, salt and pepper. Pour evenly into each casserole (each will get about 3/4 cup). Bake for 30-35 minutes, until eggs are set and tops are golden brown. Rest for 5 minutes and enjoy!
Notes
- Make sure your glass food containers are oven safe, like the ones linked above – casseroles go directly into the oven (not on another pan).

Looks delicious! How many ounces do the containers need to be?
Hi Pam,
20-22oz containers are perfect!
Can I keep these in the fridge? How long?
Hi Stella,
Yes, you can keep these in the fridge up to 4 days.
I made these and they were delicious! Quick question- do you think they would be ok to freeze?
Hi Shelli,
Glad you enjoyed! I’ve never tried freezing but I don’t see why not – just make sure your containers are freezer-safe (if not, remove from the containers and wrap individually after cooling). I’d thaw in the fridge overnight before reheating!
