What You’ll Need

Equipment
Ingredients
  • Kodiak pancake mix: Or pancake mix of choice.
  • Cinnamon
  • Salt
  • Liquid egg whites
  • Unsweetened almond milk: Or milk of choice.
  • Maple syrup: I use sugar free.
  • Vanilla
  • Toppings: Greek yogurt, peanut butter, fruit, more maple syrup, etc.
Microwave pancake bowl with greek yogurt, peanut butter, banana, strawberries on a wooden cutting board with golden fork.

How To Make It

  1. Mix: In a microwave safe bowl or container, mix the pancake mix, cinnamon, salt, egg whites, milk, syrup and vanilla until smooth.
  2. Microwave: Microwave ~90 seconds, or until risen and center is set.
  3. Decorate: Add your favorite toppings and enjoy!

Tips

  • Add mix-ins: Stir some chocolate chips or blueberries into the batter before microwaving for a fun twist!
  • Weigh ingredients: For the most accurate measurements, I weigh the ingredients with my favorite kitchen scale.
  • Don’t over-cook: For the best texture, be careful not to microwave too long – 90 seconds is usually perfect for me, but every microwave is different, so just keep a close eye on it.

Really good… my 15yr old stole it this morning lol. He told me if I can make it into a tres leches. He would steal it every day… any ideas how to do this “protein style”? Ty 🫶🏻

    1. Hi Heather,
Glad you and your 15 year old enjoyed! For a protein style tres leches, you could poke a few holes in the pancake and soak with a mix of protein shake + splash of sweetened condensed milk. And maybe a little extra cinnamon in the base. ♡

  2. Rather than Kodiak would premier protein pancake mix work? Also instead of the unsweetened almond milk would this work with fairlife milk?

I had a tricky time getting the middle fully cooked. In my bowl, after 90 seconds, the outside was cooked, but the center and bottom were still raw and gooey. By the time I got the center cooked by adding incremental seconds, the outside was way overdone. Just sharing that I think the bowl really matters. Mine is Fiestaware ceramic if that helps. But the taste was good, even though the texture was what you warned of. I’ll try some other variations. Nice to have a microwave option for this!

    1. Hi Sandy,
Totally understand this. Your ceramic bowls may be thicker than my glass meal prep bowls, causing the outsides to be overdone by the time the middle is set. I’d try using a thinner glass bowl or other container next time and see if that helps! Thanks for sharing, this is super helpful for others making it. ♡

It was great! Mine fluffed up a little TOO much, so it was almost like a panCAKE! 4 year old approved!

This is my first recipe to make from you and I LOVED IT! I may have to cook it for a little less time the next time I make it but it was sooo delicious and easy to make. Thank you so much for putting your recipes out there and making them easy to follow! I’m just starting to change my diet to focus on protein so having easy to make recipes that are also flavorful make a big difference!

This was amazing! I did less pancake mix and subbed in a scoop of nonfat Greek yogurt, resulting in a very fluffy texture. I stirred in blueberries and topped with 100% dark chocolate chips and peanut butter. Super satisfying and delicious, mine said it came out to 26g protein
