What Youโll Need
Equipment
- Meal prep jars: Optional, if making multiple.
Ingredients
- Old fashioned oats
- Chia seeds
- Unsweetened coconut milk
- Maple syrup: I use sugar free โ can sub sweetener of choice.
- Non-fat plain greek yogurt
- Mango
- Unsweetened coconut flakes
- Coconut extract
- Vanilla protein powder: Iโm usingย 1UP Nutrition vanilla ice creamย (code โJayceeโ for 20% off).
- Pinch salt

How To Make It
- Add oats, chia seeds, milk, maple syrup and yogurt to a small bowl or container and mix. Add the chopped mango, coconut flakes, coconut extract, vanilla protein powder and pinch of salt and stir until combined.
- Store in an airtight container in the fridge overnight or minimum of 4 hours. Enjoy cold with more fresh mango and coconut flakes!
Tips
- Choose ripe mangos: Gently press the mango โ it should feel soft but not mushy. Ripe mangos also have white or brown speckles on their skin, and will have more of a yellow/orange/red color.
- Cutting the mango: There are a lot of different methods out there, but all I do is carefully peel the outside of the mango with aย peeler, then cut around the pit, getting as close to the pit as I can to remove all the fruit.
- If you like it sweeter: Use a vanilla greek yogurt and/or add an extra 1/2-1 tbsp maple syrup or sweetener of choice.
To Store/Meal Prep
While Iโve got the ingredients out, I like to make a few more in these cuteย glass jars from Amazon. Store up to 4 days.
