These are the ultimate lazy meal prep breakfast sandwiches. They are insanely easy to make and completely customizable. Swap out turkey sausage for whatever breakfast meat you prefer, and use your favorite cheese and brand of english muffins. Make them unique to you!

These are the ingredients I used and calculated for the nutrition listed.

What You’ll Need

How To Make Them

All you need to is cook each ingredient, then assemble your sandwiches. I go back and forth between my toaster and the mini waffle maker cooking my eggs.

  1. Lightly toast each english muffin.
  2. Cook each egg individually.
  3. Assemble each sandwich in this order: bottom muffin half, sausage, egg, cheese, top muffin half. Or honestly whatever order you want :)

That’s it guys. Seriously the easiest.

Customizations

These never get old because of how many different ways you can make them! I love combining meats, like turkey sausage + Canadian bacon, turkey sausage + regular bacon, bacon + ham, etc. Use different cheeses. Use egg whites for less fat if you’d like. So many different combos. Here are some ideas…

English Muffin Alternatives
Turkey Sausage Alternatives
  • Regular pork sausage patties
  • Turkey bacon or regular bacon
  • Plant based sausage or bacon
  • Homemade turkey sausage, made into patties
  • Canadian bacon or ham
Egg Alternatives
  • Egg whites
Cheese Alternatives
  • Velveeta American cheese slices
  • Provolone thin slices
  • Pepper jack thin slices
  • Laughing cow cheese wedge
  • Cream cheese

Feel free to swap any of these out, or something else you love as part of your breakfast :)

How To Store

Fridge: Wrap each sandwich in parchment paper or tin foil and store in the fridge for up to 4 days. Reheat in the microwave for about 60 seconds, or until cheese is melty and sandwich is warmed through.

Freezer: Wrap each sandwich in parchment paper and seal in a gallon ziploc bag. Store up to 3 months. You can reheat these in the microwave (about 1 1/2-2 minutes), or thaw in the fridge overnight and microwave for about 60 seconds (or if you wanna be fancy, you could toss in an air fryer or toaster oven for some extra texture).

Equipment

Instructions

  • Cook eggs individually (I use a mini waffle maker – spray cooking spray between each egg) with a pinch of salt and pepper.
  • Warm up turkey sausage patties in the microwave for about 2 minutes or until warm.
  • Optional – lightly toast each English muffin to help prevent them from getting soggy.
  • Assemble each sandwich layering the bottom half of the muffin, sausage, egg, cheese, then top half. Wrap each sandwich in parchment paper or foil and store in a gallon ziploc bag once cooled. Refrigerate or freeze depending on how long you need them to last!

Notes

  • If you don’t have a mini waffle maker, you can fry eggs in a large frying pan.
  • Store in the fridge up to 4 days.
  • Store in the freezer up to 3 months – use parchment paper if freezing and place wrapped sandwiches in a gallon ziploc bag.
  • Reheat from frozen 1 1/2-2 min in the microwave, or thaw in the fridge overnight and microwave 60 seconds, or until cheese is melty and sandwich is warmed through.

I’ve made this recipe a few times! I can’t find turkey sausage patties where I am, so I use turkey/chicken bacon instead! So easy to customize!
