Ninja Creami Pistachio Mint Cookie Protein Ice Cream
This ninja creami pistachio mint cookie protein ice cream sounds like a weird combo, but TRUST ME on this one. And don’t skip the cookies!

This was kind of experimental. I wanted to make a mint Oreo flavor, but wanted the ice cream to have a green tint because I feel like that’s half the experience when you’re eating mint ice cream, right? They didn’t have any mint flavored pudding mix at the store, but the DID have a green one. Pistachio.
So I thought, what the heck? Let’s try it.
I combined a few drops of mint extract with the pistachio pudding mix and left everything else in my regular vanilla base creami recipe the same. Delicious.
I was honestly shocked with how good it turned out. I knew it would probably be good just because my vanilla base recipe is already my favorite (I’m probably biased), but I didn’t know it would be THAT good.
Everything You’ll Need
- 2% Lowfat cottage cheese: If you’ve seen my vanilla recipe, you know we blend cottage cheese with an unsweetened nut milk. Sounds scary, but it makes the most delicious, creamy base. I love the Daisy brand.
- Unsweetened cashew milk: Any unsweetened nut milk will work here. Look for one that has 25-30 calories per serving. Almond milk is another great one.
- Protein powder: I use the Gold Standard Whey protein in the vanilla ice cream flavor. It’s affordable and tastes great. Any vanilla flavor will work here, but make sure you know and love the taste!
- Sugar Free Jell-O pistachio pudding mix: This doesn’t overpower you with pistachio flavor. It’s very subtle, but just enough. And it turns the ice cream a light green which, for me personally, enhances the whole mint experience.
- Mint extract: I use McCormick pure mint extract. Sub whatever mint flavoring you’ve got, but don’t overdo it! A little goes a long way. Just a few drops.
- Salt: A tiny pinch.
- Sweetener (optional): I like to add 1/2 tsp of Truvia to my Creami recipes, just to make them a tiny bit sweeter. You can add 1/2-1 tsp of whatever sweetener you like, or none, depending on your preferences.

How Long to Freeze
You should freeze your pistachio mint cookie creami mixture for at least 8 hours before spinning. I like to make mine at night before I go to bed, that way I can have it whenever I want the next day. But I’ve also made it first thing in the morning and had it after dinner that same night!
How Many Spins
If you’ve made a Ninja Creami before, you’ll know that it turns out a bit crumbly after the first spin. This is normal. You just need to add 1 tablespoon of water (or milk) and re-spin one time.
After our re-spin, we will be running this one on the “mix-in” function. This just helps distribute our toppings more evenly throughout the ice cream so you can get a bit in every bite!
So, 3 spins total (1 initial spin, 1 re-spin with 1 tbsp water, and 1 mix-in). Easy peasy.
*If you don’t add any mix-ins, just 2 spins and you’re done.
Mix-Ins
Level up this Ninja Creami pistachio mint cookie protein ice cream with some yummy toppings. Personally, I love the Oreo mint thins, so that’s what I’ve listed in this recipe.
I do 2 cookies for the mix-in spin, then crumble one more on top at the very end.
This whole thing is 260 calories with 38 g of protein, WITHOUT the mix-ins. I’ve calculated the macros without them just in case you can’t find them, don’t like them, or just prefer something else. This way, you can track any toppings you’d like.
Other mix-ins that would be yummy with this pistachio mint cookie protein ice cream:
- Thin mints (a girl scout cookie vibe)
- Mint chocolate Milano cookies
- Keebler Grasshopper mint & fudge cookies
- High Key mini chocolate mint cookies
