These kinda remind me of no bake cookies, but are made with better-for-you ingredients like natural peanut butter, honey and almond flour. They’re chewy, salty-sweet, and you don’t even need to turn on the oven. Here’s how to make them!

What You’ll Need

Equipment
Ingredients
  • Creamy natural peanut butter: Smucker’s is my favorite (made with just peanuts and salt).
  • Honey
  • Vanilla extract
  • Cinnamon
  • Fine sea salt
  • Old fashioned oats
  • Almond flour: Can sub ground flax or extra oats if needed.
  • Mini semi sweet chocolate chips

How To Make Them

  1. Mix PB base: To a mixing bowl, add peanut butter, honey, vanilla, cinnamon, and sea salt. Stir until smooth.
  2. Add the rest: Add oats, almond flour, and chocolate chips, stirring well to evenly coat. Don’t be afraid to put some elbow grease into it – you don’t want any dry patches.
  3. Press: Add the mixture to a lined loaf pan and use a silicone spatula to firmly press down evenly (if you don’t have a silicone spatula, use a piece of parchment and bottom of a cup). Chill in the fridge for at least an hour, slice into squares and enjoy!

Tips

  • Use mini chocolate chips: Minis hold the granola squares together better than regular sized chips.
  • Check peanut butter ingredients: If your peanut butter contains sugar, these can be too sweet – use a natural peanut butter with minimal ingredients (I love Smucker’s – it’s made with just peanuts and salt).
  • Chill: These are best after sitting in the fridge for at least an hour (or more if you have time!).

To Store

Store granola squares in an airtight container in the fridge up to 1 week or in the freezer up to 3 months.

Yum! I make these regularly and keep them in the freezer. Pull it out in the AM and pop it in my lunch bag. The texture is perfect after few hours defrosting in the fridge. Don’t have almond flour, so I use the full 2.25 cups of oats. Also, I cut the honey with agave syrup (half/half). I believe this makes it less sticky, but I prefer the flavor with a little less honey. Finally, for a bit less work, I freeze the individual portions right in a muffin pan (with paper liners). No cutting required! Just about to start whipping up my fourth batch :)
