I’ve been practicing lots of self control with these cause BOY OH BOY are they tasty.

There is no baking required either so you don’t have to wait to enjoy them! Though I highly recommend letting them sit in the fridge for a few hours because they are amazing chilled.

Plus, each bite has an extra 6g protein that’ll go towards that daily protein goal (if that’s your thing). You’ll also get a few grams of fiber from the oats that’ll help keep you full!

Here’s everything you’ll need and how to make them.

What You’ll Need

  • Oats: I use rolled oats (aka, old-fashioned oats), but really any oats will work since they’ll be blended up into flour.
  • Vanilla protein powder: Make sure you use a vanilla protein powder you know and love! It can definitely change the taste. I used the Optimum Nutrition Vanilla Ice Cream whey protein.
  • Salt: Don’t skip! Really makes the flavors pop.
  • Milk chocolate chips: Lily’s is my go-to.
  • Peanut butter: Creamy or crunchy (I use creamy).
  • Honey: Or another liquid sweetener like maple syrup or agave.
  • Vanilla extract: My favorite is this imitation vanilla flavor.
  • Vanilla greek yogurt: Any will work! I use Dannon light + fit vanilla greek yogurt.
  • Unsweetened almond milk: Just a little at the end to help form the dough.

How To Make Them

  1. Blend the oats: Blend up the oats in a high speed blender until it forms an oat flour. I use a Vitamix, but whatever blender you’ve got is great.
  2. Combine the dry ingredients: In a small mixing bowl, whisk together the oat flour, protein powder, salt, and chocolate chips.
  3. Combine the wet ingredients: In a small bowl, stir together peanut butter, honey, vanilla extract, and greek yogurt. Stir until there are no lumps left and everything is smooth.
  4. Form the dough: Add the wet mixture to the dry, and start incorporating together. It’s going to be really dry and crumbly but that’s what you want – just keep stirring it together and trust the process. Try to not leave any big clumps – aim for small, dry crumbles throughout. Once everything is crumbly, add about 3-4 tablespoons of almond milk (I start with 3 and add more if I need). Stir again until the mixture forms into a thick dough.
  5. Shape into balls: Using either a cookie scoop or a spoon, form the dough into 15 equal balls, about 1.5 tablespoons each. I roll the ball around between my palms to make them smooth. And that’s it!

Tips

  • Keep in the fridge: For maximum deliciousness, keep these in the fridge. They are so yummy chilled.
  • Don’t add too much milk: Start with less almond milk, then add more if you need. If you add too much, the dough can become way too sticky and hard to work with, especially if you are using a whey protein powder.
  • Blended oats vs. oat flour: Store bought oat flour is a very fine texture. I like blending my own because it’s not as fine – you still get that good texture of the oats without having them be too large or hard to chew.

Protein Powder Notes

  • I’ve only made these with whey protein powder, so I’m not sure how they would turn out with a whey/casein blend or a plant based powder. If you’re using one of those, you may or may not need to adjust the amount of almond milk you add. When in doubt, I always start with less then add more.

I hope you guys love these as much as we do! I’m going to need to start making a few batches at a time because we eat them so fast.

As always, please leave a comment and review if you try these oatmeal cookie dough protein bites out! I’d love to hear how they turn out! 🤍

I made these using gluten-free oats after buying similar protein balls at Sam’s Club. They turned out to be simple and delicious.

I’ve tried SO many protein cookie dough recipes and have been sorely disappointed every single time. This was the first and only one that’s actually tasted good! I did 1 cup of almond flour and 1 cup of rolled oats instead of making oat flour, and it seemed to work well!
