What You’ll Need

Equipment
Ingredients
  • Boneless, skinless chicken breast
  • Onion: I like to use a white onion, but yellow works too.
  • Garlic
  • Chicken broth: Regular or reduced sodium.
  • Milk: I use Fairlife fat free to keep the fats a tad lower. I’ve had some separation with brands other than Fairlife so I’d recommend 2% or whole milk instead if you don’t have it.
  • Pasta: Whatever shape you love!
  • Broccoli
  • Mustard
  • Non fat plain greek yogurt: Adds creaminess and a bit more protein.
  • Cheddar cheese: Freshly grated! It will melt down so much better.
  • Salt, pepper, onion powder, and paprika: To season.

How To Make It

  1. Cook the chicken: Dice the chicken and cook with salt, pepper, onion powder, and paprika until cooked through, about 5 minutes or so. Set aside in a separate bowl or container.
  2. Cook the onion and garlic: Cook the onion and garlic until soft and fragrant, 3 minutes.
  3. Add the liquids: Add the chicken broth and milk to the pan and heat until gently boiling.
  4. Add the pasta: Add the pasta and cover to begin cooking.
  5. Add the broccoli: Halfway through you pasta cooking, add the broccoli to steam. I find that halfway gives the broccoli the perfect amount of tenderness.
  6. Mix in the rest: Add the mustard, yogurt, and cheese and mix until cheese is melted. Freshly grated cheese is important here! It will melt so much better. Lastly, add back in the chicken and enjoy!

Tips

  • Yogurt: Measure out the yogurt at the beginning so it can come to room temp by the time you add it. This will help prevent any separation from adding the cold to the hot pasta.
  • Cheese: I used to use sharp cheddar but found that mild cheddar melts easier.
  • Milk: Fairlife milk never causes separation for me, but other brands of fat free milk have. If you can’t find fairlife, I’d recommend using 2% or whole milk instead.
  • Consistency: It may seem a bit too liquid-y at first, but will set up nicely as it cools.

This casserole is AMAZING! I am not a huge pasta fan, but I had all the ingredients to make this for a quick dinner and I am SO glad I did! I truly enjoyed this dish. Just the right amount of everything yummy.

I just made this for my dinner tonight and it was so so wonderful! Would definitely recommend trying out this recipe. Super easy to follow, easy to make, and tastes delish!

    1. The “healthiest” choice depends on your individual needs, but generally speaking, a protein pasta (like a chickpea or red lentil pasta) would be more nutritious since it’s higher in protein and fiber. Regular white pasta is still great paired with the chicken!
