This one pan cottage cheese Alfredo is ready in just 20 minutes, with an extra boost of protein from the cottage cheese hidden in the sauce.

White bowl of chicken sausage alfredo pasta with a fork and lemon.

What You’ll Need

Equipment
Ingredients
  • Chicken sausage: I love these parmesan and garlic ones. For accurate nutrition/macros, look for ones around 100 cals/12-14g protein per link.
  • Butter
  • Garlic
  • Chicken broth
  • 2% milk: Or milk of choice.
  • Italian seasoning
  • Pasta: Any shape. Use protein pasta for extra protein!
  • 2% low fat cottage cheese
  • Parmesan cheese: Freshly grated – look for the block.
  • Salt + pepper
  • Fresh parsley and lemon: Optional, to serve.

How To Make It

  1. Cook the chicken sausage: Slice the chicken sausages into coins, ~1/4in thick. Spray pan lightly with oil and cook on medium high heat until edges have crisped up and have some color (3-5min). Remove from pan and set aside.
  2. Add butter and garlic: Reduce heat to medium, add butter and garlic and cook for just a minute (being careful not to burn the garlic), stirring constantly.
  3. Add broth, milk, and pasta: Add chicken broth, milk and Italian seasoning and bring to a gentle boil. Add the dry pasta, cover with lid and cook according to box instructions, stirring occasionally.
  4. Add the rest: While the pasta is cooking, add cottage cheese and splash of milk to a food processor or blender and blend until smooth. Grate the parmesan cheese. Once the pasta is done, turn off the heat and add the cottage cheese mixture and parmesan, stirring to fully combine. Season with salt and pepper, add the chicken sausage back in fresh basil, lemon juice and enjoy!

Tips

  • Consistency: The sauce will seem a bit thin at first, but it sets up nicely after a few minutes.
  • Careful not to burn garlic: Make sure the heat isn’t too high when adding the butter and garlic and be sure to stir constantly.
  • More protein: For even more protein, use a protein pasta and bone broth.

To Store

After cooling, store leftovers in an airtight container in the fridge up to 4 days.

Fun recipe! I only had 1lb smoked sausage on hand but it works great with the flavors. Also didn’t have fresh parsley but the lemon at the end is chef’s kiss. Probably would try to experiment next time on how to incorporate a veggie with (in?) it, but I had some grape tomatoes on hand that I just ate raw alongside it and honestly it was a great combo.
