One Pan Ham and Turkey Breakfast Skillet
This one pan ham and turkey breakfast skillet is a savory-lover’s breakfast that will leave you feeling full and ready to take on the day. It’s packed with protein, healthy fats and carbs for a balanced and nutritious meal.

Why You’ll Love It
- Great source of lean protein: This is loaded with ham and turkey, packing 43 grams of protein per serving. This helps keep you full and strong.
- Complex carbohydrates: The potatoes in this are a slow-digesting, complex carb. Aka, they will keep you full and won’t spike your blood sugar first thing in the morning.
- Healthy fats: Since the ham and turkey are so lean, I love using whole eggs for some healthy fats. This helps protect your brain, organs, hormones, and helps you absorb essential fat-soluble vitamins.
- Vitamins and minerals: The onions, peppers, and potatoes provide fiber, vitamins, and minerals.
Plus, it can all be made in one pan! Yes yes yes.
What You’ll Need
- Turkey sausage: I make my homemade turkey breakfast sausage recipe with 99% lean ground turkey for the most protein. Can sub 1lb Jennie-O breakfast turkey sausage.
- Smoked deli ham: I use Hormel smoked deli ham.
- White onion
- Bell pepper: Any color.
- Frozen Southern style hash browns: Makes this quick and easy. I grab the frozen bag with onions and peppers.
- Minced garlic, salt and pepper
- Eggs: I like my eggs scrambled, but you can make this more traditional by frying them whole.
- Monterey Jack cheese: Or cheese of choice.
- Green onions: To garnish.
You’ll also need a deep frying pan. I use a 12-inch deep fry pan.

Meal Prep
This recipe makes 5 huge servings that can easily be stored for meal prep (maybe 4 if you’re like me and eat one right away). Store in airtight containers (I love these Amazon meal prep containers) up to 5 days and re-heat in the microwave or on a hot pan until warmed through.

- Individual breakfast casseroles
- Southwest bacon and egg breakfast sandwiches

- 1/2 tsp black pepper
- 1/2 tsp ground thyme
- 1/2 tsp rubbed sage
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp red pepper flakes (or to taste)
Breakfast Skillet
- 1 lb Homemade turkey sausage (see above)
- 1/2 small white onion (100 g) chopped
- 1 medium green bell pepper (150 g) chopped
- 4 cups frozen southern style hash browns (348 g)
- 1 tsp minced garlic
- 1 tsp salt (or to taste)
- 8 oz smoked deli ham (227 g) chopped
- 5 large eggs
- 1 cup Monterey Jack cheese (84 g) freshly grated
- 1/4 cup green onions (tops only) chopped
Instructions
Homemade Turkey Sausage
- Heat a large deep pan on medium high heat and spray with cooking spray. Add turkey, syrup and seasonings to the pan and cook, breaking apart into small pieces until fully cooked (about 5 minutes). Set aside.
Breakfast Skillet
- Heat the same deep pan on medium high heat and spray with cooking spray. Add onions, peppers, hash browns, garlic, and salt, and give it a good stir.
- Cook veggies for a few minutes, then add chopped ham and cook for another 1-2 minutes, until everything is soft and fragrant. Add in cooked turkey sausage and stir together.
- Scoot everything to one side of the pan, spray the open side with cooking spray, and add eggs. Scramble eggs and stir constantly as they cook. When eggs are about 75% cooked, turn off the heat and stir everything together.
- Top with shredded cheese and green onions. Enjoy with salsa, avocado, any toppings you'd like!
Notes
- Can sub 1lb Jennie-O breakfast turkey sausage for the homemade.

Enjoyed this recipe! I think I will try with bacon instead of ham next time (I am not a big ham fan). It tasted even better after being in the fridge overnight and heated back up. Thanks!
Hi Leia,
Happy you enjoyed it! Bacon would be so delicious in this.
My family loved this for breakfast. It is so filling and full of good food. The homemade turkey sausage wasn’t as “sausage-spiced” as we like, but otherwise it was delicious.
Hi Cindy,
Thanks for this feedback! I’d try subbing the Jenni-O turkey sausage or even regular sausage instead for more flavor.
