What You’ll Need
Equipment
Ingredients
- Chicken breast
- Italian seasoning: Can use a store bought seasoning or use your own blend of Italian seasonings (thyme, oregano, basil, rosemary).
- Salt + pepper
- Salted butter
- Onion: White or yellow works.
- Garlic
- Tomato paste
- White cooking wine
- Chicken broth
- Whole milk: Or heavy cream (I opt for whole milk to keep fats lower).
- Gnocchi: I use shelf stable. See FAQ section below if using frozen.
- Sun dried tomatoes (in oil)
- Parmesan
- Spinach
- Basil
- Fresh lemon

How To Make It
- Cook the chicken: Add 1 tbsp of the sun dried tomato oil to the pan on medium high and add diced chicken. Season with Italian seasoning, salt, pepper, and fully cook (5-7 minutes). Remove from pan and set aside.
- Make the sauce: Add salted butter and onion, cooking 1 minutes until fragrant. Add garlic, tomato paste, and more Italian seasoning and cook 1-2 more minutes. Deglaze with white wine, then add chicken broth and milk, bringing to a gentle simmer.
- Cook the gnocchi: Stir in the gnocchi and cook according to package instructions (~3-4 min, till the gnocchi float).
- Add the rest!: Add sun dried tomatoes, parmesan, spinach, basil, and stir until spinach is wilted and cheese is melted. Add cooked chicken, season with any more salt to taste and serve with a squeeze of fresh lemon juice!

FAQs
- Can I make this dish ahead of time?: This dish is best fresh, but can be made ahead if needed. Just store in the fridge and reheat on the stovetop with a splash of chicken broth to revive the sauce. Add fresh lemon and basil for best flavor!
- Can I add more veggies?: Yes! Feel free to toss in extras like diced bell peppers, zucchini or mushrooms when you sauté the onions. Just make sure they’re finely chopped so they cook evenly.
- Can I use frozen gnocchi instead of shelf-stable?: Of course! You’ll just need to cook it longer (check package instructions) and let the sauce reduce since frozen gnocchi releases more water as it cooks.
To Store
Store leftovers in an airtight container in the fridge up to 4 days. Reheat in the microwave or on the stovetop with a splash of broth to revive the sauce.

Can I freeze this? I meal prep a lot of protein dishes to stay on track with mindful eating
Hi Felicia,
I wouldn’t recommend freezing this one as the sauce may have some separation/texture changes after thawing. But if that doesn’t bother you then freeze away!
