Pepperoni Pizza With Cottage Cheese Crust
If you’re craving pizza but want something higher in protein, this pepperoni pizza with cottage cheese crust is for you. It’s an easy, weeknight-friendly way to indulge while staying full and satisfied!

This is one of those recipes that feels a little too good to be true. I’ll admit, I didn’t expect a cottage cheese dough to turn out as good as this, but this crust bakes up perfectly soft and fluffy. You would seriously never know the cottage cheese was in there if you weren’t the one making it. And it’s super easy. โก
What You’ll Need
Equipment
- Pizza pan: Mine is 12โณ.
- Parchment
- Pizza cutter
Ingredients
- 2% low fat cottage cheese
- Eggs
- Flour: For the best structure, I recommend usingย bread flour. It has a higher protein content which helps with gluten development and overall structure of your crust. Regularย all-purpose flourย works as well.ย NOTE: You can also use self-rising flour and skip the baking powder.
- Baking powder: Skip if you are using self-rising flour.
- Salt
- Oregano, basil, garlic powder: To flavor the dough.
- Pizza sauce
- Mozzarella cheese
- Turkey pepperoni: 2x the protein and 1/2 the calories of regular pepperoni and still so good.

How To Make It
- Preheat oven and prep pan: Preheat the oven to 400 F and line your pizza pan with parchment paper.
- Mix the wet ingredients: In a mixing bowl, whisk together the cottage cheese and eggs until smooth.
- Add the dry: Add the flour, baking powder, salt, oregano, basil, garlic powder, and mix until combined. The mixture should be wet and sticky.
- Form the crust: Use a spoon to spread the mixture onto the prepared pan, gently spreading out into a large thin circle.
- Bake: Bake dough for 15 minutes. After the first bake, top with sauce, cheese and pepperonis and bake for another 8-10 minutes, until cheese is melted and crust is golden brown. Slice into 6 pieces, top with fresh basil if desired and enjoy!

Can’t wait to try this! Do you recommend blending the cottage cheese to smooth out the curds? Or does it matter?
Hi Cassondra,
I never blend it! The curds melt down into the crust as it bakes so it’s totally up to you whether you want to or not!
Amazing recipe I make it all the time, great macros and easy to follow!
So glad it’s a new staple! โก
Could I use all purpose flour instead of bread flour? Excited to try this!
Hey Kim,
Yes you can!
