Quick and Easy Big Mac Quesadillas

If you love a Big Mac but trying to eat a little healthier, these quick and easy Big Mac quesadillas are about to be your new obsession.

These pack all the flavors of the classic burger, but come together in minutes with way more protein. They’re fast, family-friendly, and ridiculously satisfying (especially slathered in light burger sauce). Here’s everything you’ll need and how to make them!

What You’ll Need

Equipment
Ingredients
  • 93/7 lean ground beef
  • Spices: Onion powder, garlic powder, salt, pepper.
  • Worcestershire sauce
  • Low carb tortillas: Or tortillas of choice. I use these La Banderita ones.
  • Shredded cheddar cheese
  • Burger toppings of choice: White onion, pickles, tomato, lettuce, etc.
  • Non fat plain greek yogurt
  • Ketchup: I use the G Hugh’s sugar free.
  • Yellow mustard
  • Dill pickles

How To Make Them

  1. Make the sauce: I like to make the light burger sauce first so it’s ready to go – just mix yogurt, ketchup, mustard, chopped pickles (can sub relish), pickle juice, and a pinch salt and pepper until smooth. Set aside.
  2. Cook the beef: Heat a frying pan on medium high and add ground beef, breaking apart into small pieces, until fully browned (I always use a meat chopper). Season with onion powder, garlic powder, salt, pepper, and Worcestershire sauce. Remove from pan and set aside.
  3. Build your quesadilla: Add a tortilla to the same hot pan, then add cheese, meat, and burger toppings of choice (I do chopped white onion, tomato, and pickles). Fold in half and cook on both sides until golden brown and crispy. Repeat with remaining tortillas.
  4. Enjoy!: Cut quesadillas into thirds, dunk in burger sauce and dig in!

FAQs

  • What if I just want to make one quesadilla?: This recipe makes enough meat for about 4-6 quesadillas (depending on your tortilla size and how much meat you put on them). If you’re just making one for yourself, store the rest of the meat and toppings separately in the fridge up to 4 days. Reheat beef in a hot pan with a splash of water or broth or in the microwave and build another quesadilla whenever you’re ready!
  • Can I make these dairy free?: Yes! Just use a dairy free cheese (I’ve heard great things about the Daiya dairy free cheese).
  • Can I make these gluten free?: Of course! Sub almond flour, cassava flour, or gluten free flour tortillas of your choice, being careful not to overfill, as gluten free tortillas can crack easier.
