These buffalo chicken sliders are always a hit, whether they’re for a quick weeknight dinner, or a group of friends! Here’s everything you’ll need and how to make them.

What You’ll Need

Equipment
Ingredients
  • 12-count pack of dinner rolls: I like the King’s Hawaiian brand. Make sure to get the ones that say “Savory Butter Rolls”.
  • Cooked chicken: To make this super easy, I use shredded rotisserie chicken or pre-cooked chicken.
  • Buffalo sauce: I use the Frank’s buffalo hot sauce. It’s on the milder side so it isn’t too spicy.
  • Ranch seasoning: I use Hidden Valley.
  • 1/3 less fat cream cheese: Highly recommend the Philadelphia brand. It has the best texture and taste.
  • Shredded Mozzarella cheese
  • Parsley (optional)

How To Make Them

  1. Prep oven and pan: Preheat the oven to 400 F and line baking sheet with parchment.
  2. Make the buffalo chicken: Add chicken, buffalo sauce, ranch seasoning, 1/2 of the mozzarella cheese, and parsley to a medium bowl and mix.
  3. Cut rolls: With a large bread knife, slice the dinner rolls in half horizontally, so there is a top and bottom half. Remove the top half and place the bottom half on the baking sheet.
  4. Assemble sliders: Spread cream cheese on the bottom half of the sliders, then spread the chicken mixture evenly on top. Sprinkle on the other 1/2 mozzarella and pop on the top half of the buns. Spray lightly with oil and sprinkle with ranch seasoning.
  5. Bake: Cover with foil, and bake for 10 minutes, then remove foil and bake for an additional 5 minutes or until golden and crispy. Cut into individual sliders, top with more fresh parsley, and enjoy!

To Store

I would recommend eating these immediately – they are the best fresh out of the oven. However, if you have some leftover I like to either wrap them up in the same foil I baked them with, or put them in a ziplock bag. I’d recommend reheating in the oven or air fryer to bring some texture back!

Notes

For the chicken: If you’re cooking your own chicken, 20 oz raw chicken breast will make about 3 cups cooked. Make sure to season it with whatever seasonings you love!

Again, 10/10! It’s quick and it’s filling. The buffalo sauce had the right amount of “kick” to it. And I loved the “hint” of cream cheese with each bite.
