Walking tacos are one of my favorite meals to this day. Since I’ve been focused on eating a higher protein diet, I came up with a high protein version that still packs all the flavors of the OG. The game changer’s the Quest nacho cheese protein chips – 18 grams of protein per bag, and so tasty. The rest is a piece of cake! Here’s everything you’ll need.

What You’ll Need

Equipment
Ingredients
  • Quest nacho cheese protein chips: You can find them at most grocery stores or here on Amazon. Of course, you can sub regular Doritos!
  • Lean ground beef: I use 93/7.
  • Tomato paste
  • Taco seasoning: My homemade taco seasoning is the best! Can sub 1/2 packet taco seasoning.
  • Shredded cheese
  • Toppings: Tomato, black olives, lettuce, and 3-ingredient Southwest sauce are my favorite.

How To Make Them

  1. Cook the taco meat: Heat a frying pan on medium high and cook the ground beef, breaking apart into small pieces until fully browned. Slide the meat to the side of the pan and drain the excess liquid/fat (I use a folded paper towel to absorb it). Add the tomato paste, taco seasoning, and a splash of water to help evenly distribute the seasoning and thin the tomato paste. Let everything cook for 1-2 more minutes.
  2. Prep the toppings: Wash and chop the tomatoes, lettuce, olives, or any other toppings you’d like. I like to whip up a quick batch of Southwest sauce, too (if you aren’t making the sauce, I would add some sour cream and salsa).
  3. Crush chips and load up!: With the chip bag still sealed, crush the chips inside into small pieces. Cut each chip bag horizontally, the add ground beef, cheese, and your choice of toppings. Stir it up and enjoy!

To Store

I don’t recommend storing walking tacos that have already been made, since the chips will get soggy. When we have leftovers, I individually store the taco meat and toppings in airtight containers in the fridge up to 4 days. The extra chip bags we just throw in our pantry! Reheat the taco meat in a hot pan with a splash of water or broth, or in the microwave in 30 second intervals until desired warmth.
