Learn how to make the best quick and simple avocado toast, packed with healthy fats and absolutely delicious.

Two pieces of avocado toast with fried egg and sliced tomatoes on a cutting board, with avocado half in the background.

Avocado toast is one of those simple pleasures in life. It’s just so freaking good. The creaminess of the avocado paired with the crunch of the toast, with some flaky salt on top? Heavenly.

I find that when people are tracking macros, or trying to eat healthier, fats can get a bad rap. And I understand, I do. Fats have 9 calories per gram, while carbs and protein only have 4. Not to mention, they usually taste amazing, making them easy to overeat.

However…fats are essential in our diets. Too much isn’t good but too little isn’t good either. Fats help our hair grow and our skin glow. They help our organs and brain function properly. They are necessary for certain fat-soluble vitamins to be used in our bodies. Fats are pretty amazing, really.

I love to include fats from whole foods in my diet. They truly make me feel my best. Don’t let the higher fat content keep you from eating avocados and whole eggs. Seriously, just have two pieces of this avocado toast with an egg and some freshly sliced tomato tell me you don’t feel incredible.

And it’s no big deal when you have other high protein meals throughout the day. You can absolutely hit your protein goals while still having foods like this.

Alright, let’s get into it!

What You’ll Need

  • Avocados: You want to pick ripe Hass avocados, but not too ripe. Just slightly soft to the touch.
  • Lemon: Just a small squeeze from a tiny wedge goes a long way. This is optional, but I love to add it.
  • Salt: Measure with your heart here. I love salt, so I’m usually using more rather than less :) Don’t go crazy though, you can always add more on top if you need.
  • Toast: I love love loooove using Ezekiel bread. You can find this in the frozen foods section of your store. I toast it straight from frozen. Sometimes one side of the bread gets toastier than the other, so I’ll flip it halfway. It’s also the perfect size for the amount of avocado I use.

Optional Toppings

You can enjoy this avocado toast as it is, or get a little fancy with some additional toppings! It’s another thing I love about this quick and simple avocado toast. It’s completely customizable. Probably why it never gets old. Here are some favorites :)

  • Egg: I make mine in my mini waffle maker since I’m usually only making one or two. You can make it scrambled, or even do egg whites if you prefer.
  • Tomato: Since the Ezekiel toast is smaller, I like sliced roma tomatoes to fit nicely.
  • Everything bagel seasoning: This has some salt in it, so you may not need as much salt if you use this.
  • Balsamic glaze: This is incredible alone or with any of the other toppings above. I love this one.
  • 2% low fat cottage cheese: Adds protein. You could even mix this in with your avocado mash.
  • Crumbled feta cheese: Pairs nicely with tomatoes and balsamic glaze, if you’re using those.

Optional Toppings

Instructions

  • Carefully separate 2 slices of frozen Ezekiel bread from the rest of the loaf, and toast (*see notes).
  • Mash avocado in a small bowl with juice from a small lemon wedge and a small pinch of salt. Spread half the mixture on each slice of toast. Enjoy alone, or with any of the toppings listed above!

Notes

*You can find Ezekiel bread in the frozen section. Sometimes the loaf is very frozen and I need to put in the microwave for a few seconds to separate the slices. I toast mine straight from frozen. You may need to toast twice depending on the strength of your toaster. If I toast twice, I flip the bread for the second round.
