Quick Cobb Salad For One
This quick cobb salad for one is a fast, high protein meal you can take to work or enjoy at home when you’re short on time. Loaded with turkey, eggs, avocado, and bacon bits, it’s sure to keep you full for hours.

I’m not kidding when I say I ate this exact salad every day for a good month or two at work. Seriously, you could ask any of my co-workers. They would be more shocked if I DIDN’T have this salad for lunch.
It just covers all the bases for me…
- Packed with protein: With two servings of turkey, plus a hard boiled egg, this salad will keep you super full.
- Packed with healthy fats: We’ve got so many good fats in this from the avocado and egg yolk. This is another key factor in satiety. It also just makes everything taste delicious.
- Quick to make: I throw this together in about 5 minutes, when I have hard boiled eggs on hand (which I usually do). But even if you don’t have any cooked, you can boil eggs so quick. I use this egg cooker, which makes boiled eggs a BREEZE.
- Filling, but not too dense: I don’t know about you guys, but when I have something super heavy for lunch, I do not want to go back for my afternoon shift. I want to take a nap. This salad fills me up, but is still light and fresh and leaves me feeling ready to take on the afternoon.
It really doesn’t get much better. It’s so fast and delicious.
What I Use
- Iceberg Lettuce: I like the crispiness and the crunch of iceberg. It compliments all the other toppings in this salad. You can buy a pre-shredded bag, or cut up a fresh head of lettuce.
- Oven-Roasted Turkey: Deli turkey is a quick source of protein that is ready when you are. Just chop it up and toss it in. I like this brand from Walmart. I shoot for 98-99% fat free.
- Hard Boiled Eggs: I usually have some hard boiled eggs on hand, but if I don’t, I quickly make some in this egg cooker. It is so much quicker than getting out a pot and waiting for water to boil. I also don’t run into the problem of my eggs cracking if I drop them too quickly. It’s just the best.
- Avocado: Do I really need to say anything about this? Avocados are delicious.
- Bacon Bits: I like the Hormel bacon bits. Feel free to use another brand that you like.
- Banana Peppers: This isn’t shown in the picture, but I usually top this with some chopped banana peppers. They’re so good.
- Olive Garden Light Italian Dressing: You can really use any light dressing you prefer but I always use this one. It is so good and keeps this salad light.
Just toss everything together in a big bowl and enjoy! Or you can make ahead the night before to grab and go the next day. You could even meal prep two or three. One tip I have for making this ahead is just to keep the dressing in a separate container so your lettuce doesn’t get soggy.
This is one I don’t think I will even get sick of. I wasn’t kidding when I said I had it every day for lunch for months. MONTHS GUYS. It never lets me down.
Let me know if you try it out! Be sure to leave a comment/review and if you tried the banana peppers on top! I know everyone doesn’t love ’em but they are SO good.
