I love keeping a batch of these in the fridge for a post-workout boost, mid-afternoon pick-me-up, or even a healthier dessert option when the sweet tooth hits. Here’s everything you’ll need and how to make them!

What You’ll Need

Equipment
Ingredients
  • Medjool dates
  • Almond flour
  • Unsweetened coconut flakes
  • Salted caramel protein powder: I’m using the 1UP Nutrition salted caramel protein (code “Jaycee” for 20% off).
  • Fine sea salt
  • Fat free milk: Or milk of choice.

How To Make Them

  1. Soak dates: Soak pitted dates in hot water for 5 minutes, then drain. This helps soften and moisturize dates that may be dry.
  2. Blend dry ingredients: Add almond flour, coconut, protein powder, and sea salt to a food processor and pulse until coconut flakes are finely chopped and mixture is combined.
  3. Add the rest: Add dates, milk, and blend until a dense crumbly mixture forms.
  4. Roll: Scoop 1.5 tbsp portions of “dough” and roll into balls (this recipe makes 12 total). I use this 1.5 tbsp cookie scoop to measure. Chill in the fridge or freezer and enjoy!

Tips

  • Start with less milk: Only add more if needed. I find that 1 tbsp milk is perfect, but if you’re using a different protein powder you may find you may need less or more. Once the mixture begins to crumble and slightly stick together, you know you’ve added enough.
  • Mix-ins: This are delicious with extra mix-ins like mini chocolate chips or nuts!
  • Chill: I love these most cold, after they’ve sat in the freezer for about an hour.

To Store

Store salted caramel protein bliss balls in the fridge up to 1 week or in the freezer up to 3 months.
