Sourdough Breakfast Toast
This sourdough breakfast toast is packed with protein, carbs and healthy fats for a balanced and delicious start to your morning.

When I asked my younger siblings what I should call this recipe, they said “supreme breakfast toast”. And it honestly fits, this toast has got it all.
The thing I love most about it is it’s full of healthy fats. This helps start my morning off in the best way, with sustainable energy that keeps me full and helps my body feel its best.
What You’ll Need
Equipment
- Frying pan: I toast my bread on the pan, but you could use a toaster as well.
Ingredients
- Sourdough bread: I like this sourdough bread – the slices have a nice large oval shape.
- Eggs
- 2% low fat cottage cheese
- Avocado
- Balsamic glaze or hot honey: Optional (but delicious), for topping.

How To Make It
- Toast the bread: Heat your pan on medium high, spray with oil or add a little butter, then toast the bread for a few minutes on each side until golden brown. You can also use a toaster.
- Fry the egg: Spray the same pan with more oil and add the egg. Season with salt and pepper, add a splash of water and cover with a lid to steam. Cook for a minute or longer, depending on how you like your eggs. Remove from heat.
- Assemble: Layer the toast, cottage cheese, thinly sliced avocado, salt and pepper and egg. Drizzle on some balsamic glaze or hot honey if you’d like and enjoy!
Tips
- Cooking the egg: I also use my mini waffle maker to cook eggs all the time. Super easy and would make cleanup even faster.
- Adjust & customize: Use whatever bread and toppings you’d like to make this your own. Depending on the size of your bread, you may need more or less cottage cheese than listed.

So yummy and super filling!! I put Korean bbq sauce on mine instead of the ball glaze or the hot honey and it was delicious ๐
