Breakfast burritos can be a bit tricky…sometimes they turn out soggy, the filling doesn’t stay together, or it’s not distributed evenly throughout the burrito.

I almost gave up on the perfect breakfast burrito until I tried the way I’m showing you now. And WOW. This batch was a winner. Ty tells me how amazing they are every time he has one. They rarely last more than 2 days (if he knows where they are…). Here’s everything you’ll need and how to make them!

What You’ll Need

Equipment
Ingredients
  • Eggs
  • 2% low fat cottage cheese: This makes the eggs so cheesy and delicious – you won’t even know it’s there! I love the Daisy brand.
  • Turkey sausage: I make my homemade turkey sausage for these burritos. Can sub another turkey sausage like Jennie-O.
  • Bacon bits: The Hormel applewood smoke flavored ones are my favorite.
  • Chives
  • Shredded cheese: I use the reduced fat fiesta blend cheese. Any cheese works.
  • Tortillas: I really love the La La’s traditional style ones. They add a few more grams of fat per burrito, but so worth it. Of course, you can use any wrap/tortillas that you prefer.
  • Non-fat plain greek yogurt
  • Red salsa: Any thick chunky salsa will work. I like mild, but use a spicier one if you like more heat.

How To Make Them

  1. Cook the turkey sausage: Start by making the easy homemade turkey sausage or cooking pre-made turkey sausage of choice. Fully cook – about 5 minutes – then remove from pan.
  2. Whisk eggs and cottage cheese: Crack the eggs into a mixing bowl and add the cottage cheese. Whisk together, then pour into the same pan on medium heat.
  3. Add meat and cook eggs: Add the turkey sausage and bacon bits to the eggs in the pan. Stir everything together and keep stirring constantly until eggs are set and the cottage cheese curds have melted away. Remove from heat, season with salt, pepper, and add the chives. Stir everything together.
  4. Make the sauce: Make a quick sauce by mixing together the greek yogurt and salsa in a small bowl.
  5. Assemble the burritos: Layer on the sauce, 1/12 of the egg filling, and top with cheese. Wrap each burrito nice and snug. If you are eating the burrito right away, toast each side on a hot pan. For meal prep, wrap the burrito in foil or parchment paper and wait to toast until you are ready to eat!

Tips

  • Let filling cool slightly: I like to make the egg and meat mixture first before I prep the sauce and measure the cheese. This way, it has a second to cool before I wrap the burritos. It doesn’t have to be completely cooled, but it helps reduced any extra condensation/sogginess if I’m meal prepping these.
  • Toast just before eating: Use a hot frying pan to toast all sides of the burrito before eating. It is so much better this way, I promise. When I meal prep, I don’t toast the burritos before I wrap them in foil. I wait until I’m ready to eat them so it warms them up and gives the tortilla amazing texture.
  • Wait to open the tortillas: If you open your tortillas at the beginning of this process, they can dry out and become harder to work with. Wait just until you’re ready to use them to open. You could also pop them in the microwave for a few seconds to make them more flexible if you need.

To Store

Wrap each burrito tightly in tin foil or parchment paper and store in aย gallon ziploc. Store in the fridge up to 4 days or freezer up to 3 months. To reheat, microwave 30-60 seconds, then toast all sides on a hot frying pan until golden brown (defrost the frozen ones in the fridge overnight).
